Menu Plan Monday ~ Oct 6th (Thanksgiving Edition!)

Hey everyone!  Technically it’s not Thanksgiving here in Canada until next Monday but we always celebrate on the Sunday night before so we can all sleep in the next day after all our hard work :)  Just wanted to explain why you are seeing my Thanksgiving menu this week instead of next.  I’m so excited to set my Thanksgiving table this year due to some new things I’ve found to make it all fallish and festive.  I’ll be sure to take pictures!  To be honest I’d much rather decorate the table than cook the dinner but I’ve picked some fairly easy recipes so hopefully everything will come out tasting yummy.  Wish me luck!

Please note that due to our Thanksgiving celebrations, Menu Plan Monday will not go up next week until first thing Monday morning at 6:00 am pst.  I know MPM on the actual Monday, what a concept!

Here is what’s on our menu for the week:

Monday:  Kielbasa Tortellini Alfredo (I’ll make my own Lower Fat Alfredo Sauce)

Tuesday:  All-In-One Pork Chop Bake

Wednesday:  Better-Than-Ever Beef Enchiladas

Thursday:  Leftover buffet

Friday:  Baked Teriyaki Chicken served with perogies and broccoli

Saturday:  Basil-Tomato Grilled Cheese and soup

Thanksgiving Sunday:

Terrific Turkey (due to my son’s allergies I’ll do the turkey using the without stuffing preparation and cook my stuffing separately)

Flavorful Mashed Potatoes (recipe from Taste of Home’s Healthy Cooking Oct/Nov 2008)

Traditional Holiday Stuffing (recipe from Taste of Home’s Healthy Cooking Oct/Nov 2008)

Acorn Squash Feta Casserole

Chocolate Cluster-Peanut Butter Cake

Oh delic! Makes my mouth water.

I have to admit though …. I get our Thanksgiving dinner “in-a-box” from the grocery store. We don’t have family or anyone to come over, so it’s much more enjoyable for me to not have to spend the whole morning in the kitchen by myself!

I love Thanksgiving!! Especially since we don’t have it a month before Christmas! Gives me a little time in between turkeys! :D

Happy Thanksgiving to you! For a minute I thought I was in a time warp!LOL I always prepare my stuffing separate as we like it a little bit crispy on top and I believe the turkey cooks more evenly all by itself. Can’t wait to see the pictures!

Thanks for another wonderful MPM week. This is the only way I get motivated enough to plan a menu by Monday. Might have to put the pork chop bake on my menu for next weeks. Looks great and I love pork chops… and one-dish meals.

You always throw me off when you do your Thanksgiving edition – for a split second my brain thinks: “What? Already?! Oh. Wait. She’s in Canada, duh.” ;)
By the way – that cake looks and sounds TOO TOO yummy. I love the combination of chocolate and peanut butter!!

We never cook our stuffing in the turkey. I like it a little crisp & I guess there are actually health risks of cooking it in the turkey.

That acorn squash casserole looks different and totally delicious. I’m going to try it for sure for Thanksgiving . . . we have about 15 family members coming to town so I need to “wow” them with something!! I hope that your Thanksgiving is wonderful. I’m just glad that ours is not for over a month as there is no way I’d be ready to cook such a meal right now.

Happy Thanksgiving! We always celebrated Canadian Thanksgiving with my mother-in-law when she lived close by (she was from Canada). I always loved how it started the holiday season so “early” for me and really extended it.
