MPM ~ June 23rd + Rhubarb Crumble recipe

Hello happy menu planners! Welcome to another week :)

I was a super busy girl yesterday and made three different recipes trying to use up some of the rhubarb my in-laws left on my doorstep. My favorite dessert of all time is a crisp, of any kind really, but strawberry rhubarb is right up there as one of my favorites. It’s so yummy served hot with vanilla frozen yogurt scoops melting on top….mmmmm. This crisp I made was a bit different though in that it used cereal for the topping. I must say I did enjoy it! Strawberry Rhubarb Crisp

Strawberry Rhubarb Muffins

The third recipe (in the square pan) was left for me in the comments on last week’s Menu Plan Monday post by Barb (no blog). Thanks Barb! It made my father in law really really happy :)

Rhubarb Crumble

Ingredients:

1 cup flour
3/4 cup rolled oats
1 cup packed brown sugar
1 tsp. cinnamon
1/2 cup butter, melted
4 cups sliced rhubarb

TOPPING:

1 cup sugar
2 tablespoons cornstarch

1 cup water
1 tsp. vanilla
Red food coloring

Procedure:

In a large bowl, combine flour, oats, brown sugar, cinnamon, and butter; mix until crumbly. Press half of the mixture into an ungreased 9 inch square baking pan. Cover with rhubarb. For topping, combine sugar and cornstarch in a small saucepan and add water. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Remove from the heat. Stir in vanilla and food coloring. Pour over the rhubarb. Top with the remaining crumb mixture. Bake at 350 for 50 minutes or until bubbly.

Serves: 9

Alrighty then moving along I also want to totally recommend to you the Fuss Free Ravioli and Cheese Bake from last week. Wow, talk about easy. I love that you don’t even have to cook the ravioli first. So good! I would even make this for company with a nice salad and garlic toast on the side. Did anyone else try it out?

I STILL don’t think I can get into rhubarb. I love zucchini chocolate bread–does that count?

We grow a ton of rhubarb, but I let other people take it. I just don’t like it.

Thanks for sharing the link for the Fuss-Free Ravioli and Cheese Bake. I might give that a try. We just had ravioli tonight. I simply cooked the ravioli and then put it in spaghetti sauce and let it cook for a little bit. I served it up with some garlic breadsticks. It turned out pretty well and it was quite easy!
