Hi friends, last month I shared my first Catching up with Org Junkie post and I loved the feedback I got on it. So I’m going to do it again this month because I have all sorts of exciting things I could tell you. And by exciting I mean telling you a whole lot of totally random stuff about my life. Bet you can’t wait, ha! We’ll see how this goes and I’ll try not to get out of hand. Although I am starting with Margaritas and Mojitos so I really can’t make any promises.

Currently Drinking:
Okay so you all know I follow a Paleo diet to manage my autoimmune disease without meds. Well I was feeling like a bit of a treat so I thought I’d experiment with some Paleo cocktails. I haven’t had a margarita in over five years and Strawberry Margaritas used to be a favorite of mine. How exciting that I can now have a favorite treat without all the sugar, yum! You’ll notice though that I can’t be bothered to line my rim, oops.
Here’s the recipe I used –> Strawberry Paleo Margarita
Next up I made some Mojitos. But to do that I had to order this set from Amazon because to make a Mojito you need a muddler to muddle your mint.
Here’s the recipe I used –> Virgin Maple Mojito (you can add alcohol if you want though) . Delicious especially on a hot sunny day 🙂
These will definitely be my drinks for the summer. And to make it even easier to do I bought myself a strawberry and mint hanging basket combo. How cool is that? I got it from a local nursery. Fresh mint at my fingertips, yes!
Currently Eating:
Another favorite summer treat for me are cherries. I bought my first bunch last week and while they were tiny and not very juicy, it was still exciting to know they are coming.
Currently Doing:
I am spending so much time relaxing on my deck these days. A couple of weeks ago I purchased a new sofa for out there so now I can stretch right out to read and take naps. I just love napping outside! It makes me so happy.

Currently Watching:
l binge watched the Netflix show Sweet Magnolias last week and I really liked it! It is a sweet southern show with friendship at the core of it. Yes a wee bit cheesy, similar to a Hallmark movie but a little less predictable, ha! Anyone else watched it? The three friends get together every week for Margarita night so maybe that’s why I had Margaritas on my mind 🙂

I’m currently reading Dear Edward. This is one of Jenna Hagar’s book of the month picks. I haven’t finished it yet but so far it’s holding my interest so that’s good. I’ll report back.
Currently Playing:
Anyone who knows me knows how much I hate the game of Monopoly. And yes I know hate is a strong word. It’s seriously the game that never ends. It’s right up there with Candyland. Gah! Anyway my son convinced me that the electronic Monopoly Ultimate Banking version was quicker to play so I ordered it for him. And guess what? He was right! It’s definitely much more enjoyable to play for sure and takes WAY less time. If the thought of playing Monopoly makes you want to pull your hair out, give this one a try!
Currently Organizing:
Right now I’m currently organizing my taxes, does that count? I’ve been working on my taxes all month, with the June 1st deadline fast approaching, so I haven’t had as much organizing time unfortunately.
However I’ve still been decluttering on a regular basis since that’s pretty much an automatic habit now. I just toss things into my donation station (which lives at the bottom of my linen closet) as I go about my day. It’s very effective for staying on top of all the clutter. Mojitos are also my drink of the summer! Hubby pointed out that I could start harvesting mint any time because we have so much of it, and I’m about to take him up on his offer to make me some cocktails!

Ooh, thanks for the mojito link. I don’t drink any alcohol and at my friend’s 50th last year, she had some virgin mojitos for me (so special). And I discovered I love them too. Will definitely give these a try!
