Hi friends! How are you today? I came down with the flu last week so that was quite the setback. Thankfully my family helped out with getting the meals on the table.
Remember last week when I shared my accidental purple bread with you? I had no idea how it happened. Thankfully a nice reader (Hi Brenda!) figured it out for me. Turns out that it says right in the recipe blog post that if you don’t use a specific brand of psyllium husk your bread will turn purple. I’d completely missed reading that. Oops. So mystery solved! No more purple bread for me 🙂
Paleo Chocolate Banana Bread:
Yesterday I tried a new Paleo Chocolate Banana Bread recipe. It was sooo good! Yay so happy to have a recipe turn out after last week’s fail. Yum, yum, yum! Healthy and delicious.
However I have a little cautionary tale for you. Almost every Paleo recipe that calls for chocolate chips suggests using the Enjoy Life Foods chocolate chips. I have no idea why because these are NOT Paleo. They have sugar in them. It’s actually really hard to find sugar-free chocolate chips. So here is what I do. I buy this delicious Zazubean Chocolate from Bulk Barn and chop it up to use. This chocolate is sweetened with just a little coconut sugar which is Paleo approved. That ends my public service announcement for you today, ha!

Monday: Taco Salad with Quick Homemade Blender Salsa
Tuesday: Dairy-free Spaghetti Squash Chicken Alfredo
Wednesday: Dijon Mustard Honey Pork Chops served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Spinach Salad with Bacon and Eggs
Saturday: Steak Tips Hash
Sunday: YOYO (you’re on your own!)
