Welcome to Menu Plan Monday!
Hey there friends! Happy Monday to you all. We have nothing but sunshine coming to us this week with temperatures reaching double digits, woohoo! It looks like we can expect a high of 16 degrees Celsius (60F). Oh gosh you have no idea how happy this makes me. It’s been a very long six months of winter.
Last week we had some technical difficulties with the link up tool. Inlinkz had loaded up new code to their site that unfortunately wasn’t compatible with my site. Hopefully it’s all fixed up now though. I’m really hoping it works for you all today. Please let me know if it doesn’t and I’ll get on it. Thanks for your patience!
So this past weekend I finally got around to making a new Paleo bread recipe. It was a Paleo focaccia bread recipe made in a skillet. I’m always so hopeful when I try a new recipe but you know how it goes. For every one successful recipe I make there usually is a flop to follow. And I guess you can imagine what happened next. Yep this bread was a flop. But not only was it a flop, it ended up with a purple hue. Umm, what in the world is this?
Seriously, this is so the story of my life. There was no way even a filter was going to make this look any way more appealing. I could have overlooked the color if it had tasted good but I don’t think I got that right either. I have no idea what I did wrong but mine looks NOTHING like the original recipe. In fact if you are in need of a good laugh today, head on over to HERE and see how it’s supposed to look. I used the ground flax seed in place of the Xanthan gum as per their recommendation so maybe that did something. I also forgot to use parchment paper in my pan as you can see. Oh well, if it makes someone laugh today it was totally worth it :). It won’t stop me from trying another bread recipe soon.

My Weekly Menu Plan:
Monday: Everything But The Bagel Chicken Wings served with my Healthy Green Smoothies
Tuesday: All Meat and Veggie Paleo Chili (family favorite)
Wednesday: Slow Cooker Pork Loin (using a couple of substitutions) served with potatoes and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Scrambled Eggs
Saturday: BLT Salads
Sunday: YOYO (you’re on your own!)

Thank you for sharing your Pinterest fail. You are not alone with the paleo blunders! These happen to me whenever I’ve made a couple successful recipes. I take pictures of the blunders and look back on them whenever I need to laugh!

I needed a laugh today. I followed the link and hers wasn’t as pretty as yours. Lol.
She mentions that you need to use the “NOW brand” psyllium, as other brands turn the dough purple. Who knew?!?

Brenda! You solved the mystery. I have no idea how I missed the note about the psyllium powder. Mine was not the NOW brand. Okay now I feel a little better that I didn’t mess it up too badly. Whew! And thank you for your kind words 🙂
