It’s the week of May, it’s the week of May! I’m so happy we will welcome in the first of May on Thursday. I simply cannot wait because I’m hoping the warm weather will come with it :)
As many of you know I have a 14 year old son who has severe food allergies to gluten, dairy, eggs, fish and nuts. I’m always looking for recipes to make for him that are free of what he cannot have. Yesterday I made this amazing Gluten-Free & Vegan Banana Bread and it was so good. It was moist and not crumbly at all. Yum!

Tuesday: Foil-Pack Taco Chicken Dinner
Wednesday: Quick Beef Stir-Fry
Thursday: Leftover buffet
Saturday: Italian Grilled Cheese Sandwiches
Sunday: YOYO (you’re on your own!)
