Hi friends! I hope you are all doing well and feeling great. We are under an extreme cold warning here for the next week. And by extreme cold I mean temperatures in the -40C range. That’s cold y’all! It warmed up yesterday afternoon to -24C so we were still able to get out for our walk. Only my cheeks felt cold, I was layered up good everywhere else. I actually love walking at these temps, it makes me feel so alive and refreshed.
The frost on the trees was so pretty and I was hoping to take more pictures. But it turns out my phone doesn’t like to be cold and turned itself right off after just a couple of shots. This was the last picture my phone let me take while we were out. It literally shut down as soon as I took this one. I love the blue skies. So pretty!
I did not enjoy menu planning last night at all. I was so full from dinner (hubby made a roasted chicken) that just looking at pictures of food afterwards was making me ill. But I persevered and got it done. Yay me! :). Hope you were able to get yours done too.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Paleo Chicken Soup (using homemade chicken broth)
Tuesday: Rosemary-Sage Sausage Sheet Pan Dinner
Wednesday: Paleo Meat Sauce over Spaghetti Squash
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Soft Paleo Flour Tortillas
Saturday: Honey Garlic Pork Chops served with rice and broccoli
Sunday: YOYO (you’re on your own!)
