Welcome to Menu Plan Monday!
I’m finally feeling better and it’s my birthday today so I do believe it’s going to be a great day!! Whoot, whoot! I love birthdays so much.
We had a busy weekend of travel soccer with my youngest (13). It was their last games of the season and I’m really going to miss these views. So much fun!
As you know I’ve been eating Paleo for 4.5 years now to manage my Rheumatoid Arthritis without meds. Every year on my birthday I tell myself I’m going to have a little cheat treat. And every year I chicken out. I’m just too scared to do it. But this year I’m feeling wild and crazy and I’m going to have me some oats!!
I know, I know that doesn’t sound much like a treat but it will be because I’m going to use those oats to make a delicious apple crisp. Apple crisp is my all time favorite dessert and it’s the one thing I can not replicate in Paleo form. I miss it so much!! Those oats in apple crisp are there for a reason. So I found a recipe that is still dairy and sugar-free but I’m going to include gluten-free oatmeal. I can’t wait!! Plus I’m going to make some Paleo ice cream as well to go with it!
What is your favorite dessert that you’d be sad to give up?
Here’s what we’ll be eating for dinner this week.
