Welcome to Menu Plan Monday!
Hi friends! Last week I hit it out of the ballpark in terms of delicious dinners. I felt like a cooking rock star which doesn’t always happen so it felt good. It was nice to eat some lighter salads a couple of the nights and the Potato Leek Soup was so yummy too. It was my first time using leek and I was a little nervous about what to do with it. But thankfully I figured it out and it was good. I would make it again.
Sunday Prep:
Yesterday I once again had a bunch of ripe bananas to use up. Sundays seem to have become my “use up the gross bananas baking day”. My boys wanted banana bread this week so I searched for a fool-proof recipe and Jordon Page’s recipe for her Grandma’s Famous Banana Bread came up. Both my husband and son loved it and this recipe made two loaves which is great. I sliced it all up and made up two slice packages for the boys to easily grab for their lunches this week. I’ll probably freeze some too. And as you can see it’s definitely fool proof because I didn’t mess it up, ha!
After that I still had more ripe bananas to use up so I made some Paleo Banana Lemon Chia Seed Muffins for me. I started them before realizing I didn’t actually have chia seeds in my house so I had to leave those out. But it didn’t seem to matter, they were still very good. I’ll use these for my lunches throughout the week.
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Ground Beef Taco Salad (with my own Quick Homemade Blender Salsa)
Tuesday: Slow Cooker Mongolian Beef (family favorite!)
Wednesday: Chicken Teriyaki Sheet Pan Dinner
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Pan Fried Herb Shrimp
Saturday: Cobb Salad (without the cheese for me)
Sunday: Easter Dinner: Slow Cooker Ham with Honey-Glaze (I’ll use coconut sugar), Easy Oven Roasted Potatoes, Oven Roasted Asparagus and Paleo Lemon Bars with Cranberry for dessert
