Hi friends! How are you all? Hard to believe that Easter is here already this week. No spring on the horizon for us though. Check out our sad weather forecast coming up. Oy!
I wanted to update you on the Paleo Caramel Sauce I made last week. This recipe takes awhile to make but it is absolutely delicious and worth it!
However it didn’t work so well served on popcorn. It’s not a caramel sauce that hardens so the popcorn ended up a super soggy mess. Although let me assure you it didn’t stop me from still eating it, ha! I think next time I will serve it with fruit and dip to my hearts content 🙂 In the meantime I made these Paleo Lemon Cookies instead for the party I went to. They are always a favorite. Everyone loves them and you’d never know they were Paleo. Totally addicting!
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Chinese Lemon Chicken served with rice and broccoli
Tuesday: Paleo Slow Cooker Chili
Wednesday: Sausage & Potato Sheet Pan Dinner
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza Crust
Saturday: YOYO (you’re on your own)
Sunday: Easter Dinner: Perfect Roasted Chicken, Creamy Garlic Dairy Free Mashed Potatoes, Roasted Asparagus, and for dessert Paleo Apple Pecan Coconut Crisp

Many of your recipes look interesting but almost all contain things one or both us can’t eat or can’t eat that much of due to various health conditions.
The only time we have leftovers here is if I make a turkey for Thanksgiving or a ham for Christmas. Husband is adamant about not eating leftovers, so I cook only what we will eat at that one meal at a time.
Good Friday this year is a problem as it is also the first night of Passover and one of us needs to not eat meat and the other one needs to not eat – well so many things. I am going to end up cooking two completely separate dinners – grilled chicken breast for me and he will eat a bit more carbs than he (or I) and I will make him manicotti.
Easter the two of us will go to an Asian buffet that we know will have turkey for me and vegetables I can eat (both for diet and for Passover).
