Welcome to Menu Plan Monday!
Hi friends! I hope you all had an amazing weekend. I’m currently writing this on Sunday night while I anxiously wait for This is Us to come on. I’ve got my tissues ready but I’m not confident I’m emotionally ready for the whole thing. Anyone else a big fan of the show?
Recipe Highlight:
The other day my girlfriends and I were talking about the deliciousness that are Reese’s Peanut Butter Cups. That got me craving them and I decided to make a Paleo version yesterday and they totally hit the spot! If you are looking for a healthy no refined sugar treat, try making these Homemade Almond Butter Cups. Yummy!
Dinner for Others:
This week I’m making dinner for 12 people for our Alpha program at our church. That may not be a big deal for some but I’m so not confident in my cooking for others ability. In fact it makes me super nervous especially when I can’t taste test what I’m making (due to it not being Paleo). So I think what I’m going to do is make my Slow Cooker Beef Stew recipe.
It’s not Paleo but I’ve made it at least a 100 times in years gone by and it’s pretty fail proof. I’ll probably just triple my recipe and break out my big slow cooker for the occasion. Then I’ll do a Paleo modified version in my small slow cooker for my own family. Wish me luck!

My Weekly Menu Plan:
Monday: Easy Baked Chicken Thighs served with Healthy Green Smoothies
Tuesday: Italian Sausage Sheet Pan Dinner
Wednesday: Slow Cooker Beef Stew served with buns and Chocolate Marshmallow Brownies for dessert
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Pizza
Saturday: Meat and Veggie Paleo Chili
Sunday: YOYO (you’re on your own!)

Thanks for hosting and for the Paleo pb cups recipe idea! Have you ever tried tapioca flour to thicken stews? Or, I use an immersion blender to puree some of the veggies and that thickens it up. Not being able to taste test your dishes is hard, good idea to use a reliable recipe you know is great!

Yes I use tapioca flour or arrowroot starch in place of cornstarch. Works great! Thanks for stopping by 🙂
