Welcome to Menu Plan Monday!
Hi friends! Happy start of a brand new week to you and happy Family Day to my Canadian friends enjoying a day off today. My middle son (18) came home from college for his reading week so I’m super excited about that. I love hanging out with him! He loves watching Big Brother as I do and it’s way more fun to watch the show with someone else.
Valentine’s Day was good in that my husband brought home beautiful red roses for me.
It wasn’t so good in the fact that the Paleo Chocolate Raspberry treat I made for myself was another flop.
It looked good but I ended up throwing out the entire pan because it just didn’t taste very good. Not even going to link the recipe for you since I just wouldn’t recommend it.
Luckily I had my favorite chocolate bar on hand so I could still enjoy a sweet treat. This one is extra dark and sweetened with coconut sugar. Yummy! Thankfully this bar isn’t sold anywhere in my small town or I think I’d eat too much of it. Having to order it online or drive two hours to get it certainly slows me down 🙂
Here’s what we’ll be eating this week. Keeping things simple as my middle son who is home has many food allergies (dairy, gluten, eggs, fish and nuts) that I need to accommodate. Plus, of course, all my restrictions on the Paleo diet. No need to get complicated though as you’ll see. These recipes meet all the criteria plus don’t have me spending hours in the kitchen which makes me happy.
My Weekly Menu Plan:
Monday: Slow Cooker Roast Beef
Tuesday: Baked Apple Pork Chops and Green Beans (I’ll sub coconut oil for the butter and coconut sugar for the sugar)
Wednesday: Easy Honey Garlic Chicken served with rice and broccoli (I’ll sub coconut aminos for the soy sauce)
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me BLT Avocado Salad
Saturday: One Pan Roasted Potatoes, Asparagus and Sausage
Sunday: YOYO (you’re on your own!)
