Weekly Dinner Inspiration for the week of Feb 12/18 - get dinner on the table each night with less stress and chaos!

Hi friends! I hope you all had a nice weekend. I enjoyed getting to the city on Saturday for a little shopping which always makes me happy. And then yesterday was such a beautiful day. I’m so happy I got to feel the sun on my face even if only for a short time before I had to hop back in the truck to get warm.

Remember last week when I said I’d be making dinner for 12 at our church? Well it didn’t go as smoothly as I hoped it would although I can’t say I’m surprised it didn’t. Cooking for others is so not my gift and for good reason. Almost always something goes wrong and this time around was no exception.

I put my stew into my large slow cooker at 8:00 am on slow and 10 hours later my carrots were still not cooked. The Paleo version of the stew I made the same day in my small slower was done beautifully after 8 hours on low. So yes I think it’s safe to say something is not quite right with my big slow cooker. Bummer. Everyone said it still tasted good which was very kind and gracious of them.

Oh and did I mention that I threw out my first batch of brownies? I made the recipe with the marshmallows on top and trying to cut them turned into a very ugly disaster. Story of my life people, story of my life. Thankfully my second batch, using a very simple brownie recipe, turned out much better. Oy!

Here’s what we’ll be eating this week.

My Weekly Menu Plan:

Monday: Sheet Pan Bruschetta Chicken & Veggies

Tuesday: Slow Cooker BBQ Pork Tacos with Honey Mustard Slaw (I’ll use this Paleo BBQ Sauce in the pork)

Wednesday: Happy Valentine’s Day! I’ll be making Slow Cooker Rustic Meat Spaghetti Sauce (I’ll sub coconut sugar for the sugar) served over pasta for the boys and spaghetti squash for me. For a special dessert: Paleo Chocolate Raspberry Candy Bars

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Scrambled Eggs

Saturday: BLT Salad with Avocado

Sunday: YOYO (you’re on your own!)

    Bless your heart – I’ve had meals that turned out like that, too! The last time my parents were here for Sunday dinner I ended up throwing out my twice baked potatoes and starting all over. I was so glad I did – they came out much better the second time. :) I also had to replace my 8 year old slow cooker this month! It majorly overcooked my chicken and barely cooked potatoes in the same dish!

      This is my second big slow cooker and they just don’t cook food the same way. Not sure what I’m going to do next :( Oh and twice baked potatoes are soooooo yummy!!
