Menu Plan Monday ~ Jan 9/17

Menu Plan Monday ~ weekly dinner plan inspiration for for weekly menu. Recipe links included for the week of Jan 9/17

Hi friends, welcome to another organized menu plan week. I’ve got two slow cooker recipes on the menu this week to make life a little bit easier. I love getting dinner ready in the morning when I have more energy. I haven’t been feeling well lately so I need all the help I can get with dinner. Anyone else using their slow cooker this week?

Recipe Highlights:

Speaking of slow cookers, I totally forgot to tell you about two slow cooker recipes I tried at Christmas that were amazing. The first was a Slow Cooker Stuffing recipe that cooked up beautifully without drying out (like others I’ve tried) and while I couldn’t eat it myself (not Paleo), I was told it was most excellent.

The next was the Dairy-Free Slow Cooker Mashed Potatoes. This recipe was unique in that you actually cook the potatoes in the slow cooker rather than just use the slow cooker to keep them warm. The recipe wasn’t accurate for us in terms of cooking time, it actually took more like three hours to cook the potatoes, but once they were cooked we just mashed them up in the slow cooker and left them there on warm while we waited on the rest of the meal to be done. Everyone loved them! I’ll definitely make them this way again throughout the year.

Grocery Budget Makeover:

If saving money is one of your new year’s goals this year, a great place to start is with your grocery budget. To help you with this you might be interested in checking out Erin Chase’s very popular Grocery Budget Makeover course. She only offers this course a couple of times a year and today is the last day to register for the winter session which starts tomorrow.

The Grocery Budget Makeover is a total spending overhaul that will help you stop overspending, stop wasting money, and forever change your mindset and strategy when it comes to grocery shopping. Erin has been helping people cut their grocery bills in half for the past 8 years and she wants to help you next! Anyway if that sounds like something that might interest you, you can get all the details HERE.

I used my crock pot yesterday. I love how convenient they are. The Moroccan Chicken Burgers look delicious. Have a great week.

When I was working and the kids were still at home, I would plan so I didn’t have to rush when I got home and the kids were yelling, “Where’s my supper OR What’s for dinner??”
The crockpot was my best helper! Cooking the mashed in the crockpot sounds great and easy to me.

Hi Laura — Gosh – I had to send Erin Chase an email cuz I can’t register on her website. The links aren’t taking me anywhere once I hit “register”. Hoping I can still take the course. Thx for this. I’ve seen this before and have been curious. Not good at menu planning, although I aspire to be so. Love your Blog.
