Hi everyone! Welcome back to Menu Plan Monday! Thank you for allowing me to take a break for a little Canadian vacation. We had a great time!
I manged to stick to my Paleo diet while on vacation in Prince Edward Island. It was a little tricky but not impossible. One of my favorite Paleo meals was a spinach salad we had at a restaurant called Sheltered Harbour. It consisted of spinach, egg, mushrooms, onion, bacon, tomatoes and scallops. It was so good!
But what made it especially good was the dressing. Normally I just eat my salads without dressing in restaurants as they typically aren’t safe for me but this salad was served with a homemade Creamy Honey Basil Dressing that was safe for me. Oh my what a treat, yum yum! The server double checked the recipe for me and said the ingredients included egg, oil, honey and basil (any maybe vinegar I can’t remember). So it was basically similar to making homemade mayo just in a thinner consistency. I thought I’d have no problems finding a recipe like it online but haven’t had any luck so far so I will have to tinker around and try to recreate it myself. I’ll keep you posted!

Sunday: YOYO (you’re on your own!)
