Menu Plan Monday – Jan 15th
I hope everyone had a great weekend! I have an easy week planned menu wise as my hubbie will be away for a few days. So we’ll be eating simple foods and on Thursday my daughter is even going to take a turn at cooking by making Parmesan Chicken Fingers. The recipe is from The Everyday Kids’ Cookbook. Should be fun!
If you haven’t purchased the new Feb 2007 issue of Taste of Home’s Simple and Delicious magazine then you really must…it is awesome! The clip and save recipes in the middle are all slow cooking recipes plus there is an amazing low fat Chocolate Chocolate Chip Muffin recipe to die for on Pg 45. I made them yesterday and they were so good and because they turned out I just had to take a picture! The recipe says it will make 32 muffins but I made them as mini muffins for a book party I was hosting (those are just cinnamon hearts in the middle for decoration). Yum!
So here is my menu for the week:
Monday: Fajitas
Tuesday: Soup and grill cheese with spinach salad
Wednesday: Pancakes with strawberries and cool whip
Thursday: My daughter’s cooking Parmesan Chicken Fingers with fries and carrots
Friday: Slow cooker Spaghetti pork chops served with rice and broccoli
Saturday: Dad’s day
Sunday: Free for all

That’s neat that your daughter is taking a turn to cook on Thursday night. I am sure you are very appreciative!
It’s too late for me to post tonight, but guess what? (Now I know I can tell you and you’ll like this) I did one of those “cook one whole day and have meals all month” thingies. Well, only, it took 3 days to cook it all and it was the 2 week meal plan, but still! I have a freezer full of meals and some will go to my good friend who is being induced tomorrow. I’m usually NOT organized, but you are inspiring me!!
Mines up but still amending it as I rummage through the fridge and cupboards!
Yummy week! I need to do fajitas next week!!

This is the first week for me to put this into action – so far, so good! Except, I start my menu on Sunday and go through the whole week. I don’t list any leftover days because we usually take the leftovers for lunches the following days – works best for us.
Looks like fajitas were (are)a good plan for this week!

Your little muffins look devine and I love the red heart look. ANd pancakes with Strawberries…..I love this idea…we dont have strawberries right now…this spring I will make my jam.I’ll have to post that recipe….

Just wanted to tell you that I asked for, and received, the Taste of Home cookbook for Christmas. It’s great, and the thing is huge! I started looking through it this weekend and was so excited to find a card to send it for a free one-year subscription in the front. Can’t wait to start getting those! 🙂

I haven’t made it to the store for the latest one yet though, since hubby is going there later, I’ll have him pick it out, though he gets very annoyed because there’s “so many different ones” (he says LOL)

Hi Laura-Thanks for hosting this. I am a homeschooling mom who is quite shy and have been feeling a bit overwhelmed and lonely. I found blogging and wanted to jump in and get started but wasn’t sure where to start. My favorite thing on your menu plan for this week is the spinach salad. I could eat spinach salad seven days a week!
