Hi friends! Did you miss Menu Plan Monday last week? I hope you all had a terrific weekend. I so enjoyed my time away with the girls. We went to a beautiful resort in the province of British Columbia called Sparkling Hills Resort. The view of the lake and mountains from our room was absolutely stunning!
So fancy and so fun to hang out with my girlfriends of 35 years! We had so much catching up to do and we just talked and talked and talked. The food was so good too, I had no problems eating Paleo while there. Here’s two of the lovely meals I enjoyed.

Monday: Whole30 Spaghetti Squash with Pesto
Tuesday: Sheet Pan Flank Steak with Garlic Roasted Potatoes and Broccoli
Wednesday: Strawberry Mango Salad with Chicken
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Easy Tuna Cakes
Saturday: Paleo Chipotle Honey Lime Pork Tenderloin served with baked potatoes and carrots
Sunday: Church potluck – Pina Colada Coleslaw and Paleo Glazed Banana Bread Donut Holes
