Hello my menu planning friends! Got your menu plan done for the week? I’m sure you do because if you are like me you’d be lost without one. However if you still struggle with getting it done for whatever reason I can understand. I’ve been there. I actually didn’t start menu planning until after my third child was born. I didn’t even know menu planning was a thing. I really just thought you went grocery shopping and randomly grabbed ingredients that you hoped could be made into something later. Of course that never happened because by the time dinner rolled around, I was too tired and hungry to try and figure it out. Can anyone relate?
That’s where menu planning saved my life. I now only buy the groceries I need for actual recipes I’ve picked ahead of time, I save money planning around sales, I can prep recipes earlier in the day when I’m less tired and I throw less food away. I saved my sanity no longer having to panic at 4:00 wondering what I was going to do while the kids melted down around me. Such a beautiful thing!

Monday: Taco Salad
Tuesday: Cheeseless Chicken Parm served with broccoli
Wednesday: Slow Cooker Rosemary Garlic Crusted Roast Beef served with roasted peppers
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me BLT Avocado Lettuce Wraps
Saturday: Roasted Butternut Squash Soup
Sunday: YOYO (you’re on your own!)

The leftover buffet works so well, we line everything up on the counter and everyone gets to mix and match what they want to eat.
