Hi friends, welcome to Menu Plan Monday! In a matter of days we went from the -30C (-22F) weather we had been experiencing for weeks to 3C (37F). I was able to go for a walk today with no toque, no scarf and no parka! Woohoo!! I’m hoping the warm weather sticks around for awhile, that would sure be nice.
Also in case you missed it, last week I shared two commitments I’m making this year and one of them looks a little something like this:
2L of water a day, whew!
I do hope you take a few minutes today to create a menu plan for your week to set yourself up for success. Nothing makes life easier than not stressing come 4:00 about what’s for dinner. It makes such a HUGE difference!
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Paleo Taco Stuffed Zucchini
Tuesday: One Pan Lemon Chicken with Veggies (I’ll use carrots instead of beans)
Wednesday: Pork Chops and Apple Sheet Pan Dinner
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Steak Salad with Creamy Garlic Vinaigrette
Saturday: Paleo Fish Tacos w/ a Spicy Slaw (a favorite!)
Sunday: YOYO (you’re on your own!)

Our forecast here in upstate NY is calling for a 10-day stretch of highs in the 30s and 40s, and I’m SO excited about it!! (And we don’t get temps nearly as cold as you do!) Enjoy the heat wave! 🙂

Wow – that’s quite a freeze for my Florida blood!!!! 😀 We had a couple of days in the 20s last week and that was enough. Love those sheet pan dinners!!!

I love sheet pan dinners too, one pan that you don’t have to babysit in the oven. Easy clean up too!
