Menu Plan Monday for the week of April 18/16 - recipe links and menu planning inspiration to help you get dinner on the table with less stress!

Hey y’all! We had amazing weather yesterday which meant I was able to pull out my deck furniture, get it cleaned up and have some relaxation time out in the sun enjoying a really great book and a Booster Juice treat. Yum!  It was a really great day!  I hope you enjoyed nice weather wherever you are too.

Many of you know I’ve been eating Paleo for almost a year and a half now. I recently got a book from the library called He Won’t Know It’s Paleo (affiliate link) and am excited to put a few of the recipes on my menu plan this week. Some of the recipes have lists of ingredients much too long for my liking but many are super simple as well.

Paleo Herb Roasted Drumsticks

I hope you take a few moments today to get your menu planned for the week.  Stick to easy, quick recipes, purchase the needed ingredients and be ready for less stress in your life!

My Weekly Menu Plan:

Monday: Apple, Cheddar & Turkey Panini Sandwiches and I’ll make a sandwich with Paleo Sandwich Bread (new recipe for me, wish me luck!)

Tuesday:  Slow Cooker Garlic Crusted Roast Beef served with rice and broccoli

Wednesday:  Herb-Roasted Drumsticks served with Sweet Potato Hashbrowns and raw veggies

Thursday: Leftover buffet

Friday: Pizza Party Friday Night! and scrambled eggs and veggies for me

Saturday: Steak and Pineapple Skewers (using coconut aminos instead of soy sauce)

Sunday: YOYO (you’re on your own!)

    I am going to have to see if my library has this cookbook! I am always looking for new recipes and need some that my family won’t turn their nose up at! Thank you for sharing!

    Garlic crusted roast beef sounds so good! Since you’re eating paleo do you just skip eating the rice?

      Yes that’s right. I serve the rice for the rest of the family as they aren’t strictly Paleo like I am.

    That cookbook looks great! Will have to check it out :) The drumsticks look particularly tasty. We eat a lot of chicken, and I’m always on the look out for new chicken recipes!

    For those of you curious about Paleo. I really love it. It basically cured my PMDD. I was a miserable mess and in serious pain and my monthly cycle would ruin my families week. I will never forget my first month Full Paleo. I start my cycle and had no idea. No hysteria, no, mood swings and NO pain at all. It was a miracle.

    I know TMI. But it really made my life change.

      Oh so great to hear Pamela! I’ve noticed incredible results with my Rheumatoid Arthritis, no more joint pain!!

    What are coconut aminos and where can I find them to buy? I react quite badly to Soybean products and soybean cousins like lima beans and broad beans, plus GMO’s which was hard to figure out. Since soy is used in flour, peanut butter, so many prepackaged foods, Jello, etc., I am forced to make everything from scratch and gluten-free is not a guarantee to be soy-free, either. I know, sucks to be me :)

        Thanks, Laura! We actually live in Canada, but are on a year long Travel Visa in Australia at the moment. We sold our house, most of our belongings and donated our car, so we ‘live’ at our son’s address :) I will look for the Naked Coconut brand here or something similar. Thank you so much for your help. It is very much appreciated.
