Menu Plan Monday for the week of March 21/16....recipe links and menu planning inspiration!!

Hi everyone, how are you this new spring day?  Gosh I love spring but I’m not entirely sure it is here for us just yet. We are suppose to get snow today which makes me sad.  I’m so ready to see green grass and leaves on trees!

Recipe Highlight:

Last week’s recipe highlight goes to a recipe I didn’t even make myself.  My girlfriend, who also eats Paleo, brought these amazing Coconut & Avocado Grasshopper Bars to a baby shower we attended. Oh my goodness, they were so so good.  I haven’t eaten refined sugar for over a year and a half now and don’t crave sweets very often.  I find even raisins are too sweet for me now.  But every once and awhile it’s still nice to have a (refined) sugar-free treat. These goodies are made with honey and were really delicious and creamy.  I’m going to try making them for Easter dinner this week, hopefully they turn out for me!

My Weekly Menu Plan:

Monday:  Paleo Chicken Wings served with raw veggie plate

Tuesday:  Honey Roasted Pork Tenderloin served with rice and broccoli

Wednesday: Paleo Sweet Potato Chili

Thursday: Leftover buffet

Friday: Pizza Party Friday Night! and for me Lemon-Herb Fish Cakes

Saturday:  YOYO (you’re on your own!)

Sunday: Easter Dinner: Slow Cooker Ham, Creamy Garlic Dairy-Free Mashed Potatoes, Maple Mustard & Dill Glazed Carrots, and for dessert these yummy Coconut & Avocado Grasshopper Bars

  1. We’ve had so much unseasonably warm weather this winter that it’s been really nice! However, yesterday and today it got cold, which is so not cool for the beginning of spring!
