Hi y’all! Happy Monday to you. I hope you are ready to get your organization on by menu planning for this week! It really is the best way to get a handle on the chaos of life. I got my bake on yesterday and made some Glazed Lemon Muffins for my youngest for his school lunches. According to him they tasted delicious, here’s how they looked:
Nice right? Well lest you think I’m a baker extraordinaire (only those of you who are new here would be thinking that, ha!) let me just nip that in the bud right now. You see when I saw how lovely the muffins above turned out I thought to myself, why not make some safe Paleo lemon muffins for me. So I found a recipe online for Paleo Lemon-Coconut Muffins and whipped them right up. Unfortunately this is how these ones turned out:
Oops. You win some, you lose some! I ate the crumbs though and they tasted good, they just didn’t hold together at all.
I’m not sure if you got a chance to read my current obsession post last week but if you did you saw that I recently purchased Laura Vitale’s new cookbook, Laura in the Kitchen (affiliate link*). It’s such a beautiful cookbook!
Tonight my son made Laura’s Shortcut Crispy Old Bay Fries recipe from the cookbook. I could even have them and they were just yummy!!
My Weekly Menu Plan:
Monday: Spaghetti Squash Bolognese
Tuesday: Butternut Squash Soup
Wednesday: Crispy Chicken Thighs with Pineapple Honey Mustard Sauce served with broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Honey Lime Glazed Salmon (with slight modifications)
Saturday: Portobello Mushrooms Stuffed with Scrambled Eggs
Sunday: YOYO (you’re on your own!)

Making muffins for lunches just happens to be on my to do list for the week anyway. Those look amazing! I happen to have some lemons here, too, so I’ll be making these for sure. Thanks for sharing!

Those Glazed Lemon Muffins look amazing. I’m sure my girls would love those. I’m sorry but I couldn’t help but chuckle at the paleo ones. I’m trying to learn to bake with alternative flours and it can certainly be tricky. I’ve had several baking attempts that look just like that.

It can be frustrating because those ingredients aren’t cheap but oh well, at least I can still eat the crumbs lol.

Those lemon muffins do look delicious! My mom makes the most amazing lemon loaf with a sweet/tart glaze like that. I’m salivating just thinking about it!
