Menu Plan Monday for the week of Jan 19/15

Hello pretty people!  How is it already Jan 19th?  Time is flying by these days it seems.  Something I’m super excited about this week is my new spiralizer that I recently purchased off Amazon.  The first thing I’m going to make are some zoodles using zucchini, they sound really yummy (recipe link below).  Do any of you have experience with one or recipe links you want to share with me?

Freezer Meals:

A lot of people have been asking me about freezer meals lately.  I do have a post with a collection of freezer meal tips and recipes that you might find helpful.  I also  recently found this great freezer meals post over at Two Peas and Their Pod with lots of delicious recipes listed.  Freezer meals are a great way to make busy nights so much easier.  Spend some time on the weekend putting some meals for the freezer together or even make a double batch through the week, one to eat and one to freeze.

  1. I hope you’ll let us know how you like the spiralizer. I always get tempted by those kitchen gadgets especially the ones that look like as much fun as that one. I fell off the menu planning page for a few weeks so I’m glad to have one for this week and of course, glad you are still hosting this–thank you!

  2. I was going to use my old faithful spice combo for Roasted Chicken tonight, but after reading over your menu, I may have to go with Rosemary. Thanks for hosting us!

  3. I recently bought a spiralizer too. Tried using it once with potatoes and had no success, but planning to use it this week for my daikon salad. Fingers crossed it comes out as pretty as everyone else’s spiralized delicacies!

  4. I wanted a spiralizer too, but Hubby bought me a really nice mandolin for Christmas. I’m hoping it works just as well… can’t wait to test it out. Let us know how the zoodles are!!

  5. I have the same spiralizer, last night I did seafood in garlic and olive oil with zucchini noodles….so so good! I have just used it to replace pasta for me.

  6. I’ve got zoodles on my plan for tonight! I love my spiralizer, it’s awesome. Have fun with it!! I find zucchini and carrots are the easiest to use, but have also had success with potatoes, sweet potatoes and apple!

  7. I’ve never used a spiralizer but I was just thinking about one this weekend. Love all your helpful tips Laura. Thank you!
