Hello Org Junkie Readers! Happy Spring! My kids are on Spring break this week and so there has been lots of sleeping in at my house and some extra kids around hanging out. I have been spending time in the kitchen making some Easter treats and letting the kids taste test them for me! With teenage boys around, food can certainly disappear fast. These rice cracker treats are a cinch to make and are a huge hit with the kids. They are not only delicious, but also gluten and nut free, so they can make a great little gift or take out treat.
The rice crackers provide a satisfying salty crunch, while the melted wafers add the perfect bit of sweetness to this treat.
And let me share with you just how easy these are…with no baking and just 3 ingredients.
So here we go! Are you ready?
Rice Cracker Treats for Easter
Ingredients:
Gluten-free rice crackers
Melting wafer {I used Wilton brand}
Easter Sprinkles
To make:
1. Line a cookie sheet with waxed paper.
2. Melt wafers in microwave according to package directions in small bowl.
3. Stir melted wafers until perfectly smooth, Dip rice crackers into melted wafers covering half of cracker.
As I find that more and more people we know are no longer able to eat gluten, I really like having some treats that I can easily make that are gluten and nut free that I can serve on short notice.

Please verify the melting wafers and sprinkles are gluten-free as well if you truly want these to be gluten-free!

When you say melting wafers – is that like a melted chocolate thing? Never heard of that in Australia.

Yes they are flat disks of chocolate that melt easily for recipes such as this.
