Menu Plan Monday ~ September 9/13


Happy Monday y’all (is there such a thing?).  Fall is in the air isn’t it?  I don’t know if I’m ready to say goodbye to summer just yet, but the leaves are already changing so it’s coming whether I’m ready or not.  Blogland has exploded with fall recipes recently.  Everywhere I look I see apple recipes, caramel recipes, soup recipes, squash recipes and the dreaded pumpkin recipes.  Blech!  I am not a fan of pumpkin and my husband doesn’t really care for it either, thank goodness.  We also both can’t stand green peppers.   Isn’t that sweet?  Ha!

Monday:  Bacon Cheeseburger Casserole

Tuesday:  Slow Cooker Corn Chowder

Wednesday:  Crunchy Black Bean Tacos with homemade corn tortillas

Thursday:  Leftover buffet

Friday:  BLT Chicken Salad Sandwiches

Saturday:  San Francisco Chops served with rice and broccoli

Sunday:  Brunch potluck at church ~  Crockpot Quiche

    I love Fall but the temps are still in the 90s here so I’m not feeling very Fall-ish yet. I was craving soup this week but just can’t bring myself to put it on the menu yet. Maybe in a few weeks. Thanks for hosting!

[…] Strawberry with Balsamic Vinegar & Mascarpone 2013-09-11 00:41:34 Serves 4 Write a review Save Recipe Print Total Time 3 hr Total Time 3 hr Ingredients • 750 g small strawberries • 60 g sugar • 2 tbsp balsamic vinegar • 125 g mascarpone • Optional: mint leaves for decoration Instructions 1. Remove the green leaves. 2. Place all the berries in a large glass bowl, sprinkle sugar evenly over them and mix gently together so all the berries are covered. 3. Leave for 2 hours, so the berries get juicy. 4. Drizzle vinegar over the strawberries. Mix it carefully and put them in the fridge for about 30 min. 5. Put the strawberries in 4 glasses, drizzle the sauce and a add a dash of mascarpone on top.
