Menu Plan Monday ~ August 17th

Hi everyone, thanks again for being so understanding last week (especially when I forgot all about Mr. Linky) with everything we are going through.  It has been a long hard week.  Yesterday was the service and it was absolutely beautiful.  Through the grace of God I made it through my speech without crying.  I appreciate your prayers and support more than you’ll ever know.

I still have company staying with me so will keep this short so as to not neglect her for more than a minute :)  If you’d like to read another episode in the “recipe disasters” saga of my life, check out this post that I wrote for The Juice.  You long time readers here will totally know I’m not kidding when I say this type of stuff happens to me ALL THE TIME.

So here we go with our menu for this week:

Monday: Hamburgers and grilled zucchini

Tuesday: Chicken Caesar Pasta Salad

Wednesday: Polynesian Roast Beef served with potatoes and carrots

Thursday: Leftover buffet

Friday: Enchilada Casserole

Saturday: Sun Dried Tomato Raviolis a la Summer

Yummo on that ravioli dish! You know you have a popular mr linky when I got here at 7:59pm clicked refresh at 8pm and was already #16 to link LOL!!Some people might spend their Sunday night watching vampires (so I hear) I read others menus LOL its become an addiction really

I can relate to your pie story. First time I made apple pie was for our 2nd Thanksgiving with in-laws. I wanted to impress. In the process I burnt my wrist with a scar still there to remind me. Next Thanksgiving, I brought 4 pies (Mrs. Smith) When someone said ‘Great pie’ I replied ‘Thank You’ and left it at that!

I was thinking of attempting to make my own pastry crust for my chicken pot pie this week, but your apple pie story over at the Juice has me thinking twice… Stuff like that happens to me ALL THE TIME too… I am coming to appreciate my own limitations- and thinking that your story might just be a warning. Thanks!

Summer is just about over and its time for me to get back into my good habits – like Menu Planning! So I’m back this week – also with Enchilada casserole on the menu.

Thanks for hosting this weekly meme. I’m a newbie and am looking forward to the meal planning and new recipes. I already saved that Enchilada Casserole recipe since I am a huge mexican food fan but need something healthier and cheaper than going to the local restaurants.

Continued prayers for you loss and your friend’s family.
I’m still working on my menu for the week. Meatballs and spaghetti, porkloin soup, pumpkin potato pie, sausage and hominy soup, deconstructed lasagne, mushroom marsella pappardle. I was on a shopping trip on Friday. Because I knew I needed ingredients for the week, I took two EveryDay with Rachael Ray magazines with me. I’d marked some pages in these before and knew there were recipes I wanted to try. So I menu planned 5 meals while sitting in a parking lot on my trip. I know, I should have done it at home but my week just gets crazy and I don’t always take the time to do it. But I did it. So that counts for something, right?
I spent a good portion of Sat. in the kitchen. I grated 10 cups of zucchini. 2 cups were used in chocolate zucchini cake. Later I used my Angel flake biscuit recipe to make Cheesy turkey swirls and cinnamon rolls out of. The turkey swirls and zucchini cake went to a church picnic on Sunday. I halfed the cake and gave other half to daughter for a dessert picnic she went to. Mine got all eaten, she got half hers eaten. I think there were alot more people at our picnic. It was a great day and 20 people were baptized in the river! Awesome!!! Have a great week.

P/S the other 8 cups of zucchini were put in ziploc bags and put in the freezer for later use. Today I’m making banana bread out of icky bananas…..ok, bye!!

Hi!

I just stopped by to see what was going on and I realized it’s Menu Planning Monday again…oops! I haven’t really menu planned, but I am planning for a camping trip and those meals. I’m going easy on those (dutch oven cooking and s’mores!).

My 2nd Menu Planning Monday on my blog. I love love love it. I already have my menus for the rest of the month, and am working on September!
Thanks for the kick in the fanny to get moving and meal plan. It makes it so much easier when I walk in the door after being gone for 11 hours during the day!
