Menu Plan Monday ~ April 20th

Hi all!  How was your week? Were you able to stick to your menu plan?  I made all my planned recipes but I did have to switch a few days around.  That’s the part I love about menu planning, it’s so flexible!

Today though I had a heck of a time coming up with my menu for some reason.  Nothing was jumping out at me but I persevered and I think I’ve come up with some good selections.  I’m going to try sweet potato fries again.  From all the help you gave me a couple of weeks ago I realized I had definitely cooked mine too long last time.  I now know cooking sweet potato fries too long will result in a soggy mess.  I’ll let you know how they turn out this time around.

My favorite food by far has got to be wrap or tortilla anything.  Last week’s Black Bean, Zucchini and Tomato Quesadillas were a big hit.   I ended up just mashing the grated zucchini, beans and salsa together and cooking the quesadillas in the oven.   You couldn’t even taste the zucchini.  So yummy!

Here’s what this week looks like:

Monday: Fuss-Free Ravioli and Cheese Bake with the addition of some sausage and zucchini

Tuesday: Baked Chicken Fingers with Spinach Salad

Wednesday: Polynesian Roast Beef with roasted red potatoes

Thursday: Leftover buffet

Friday: Homemade Quick Pizza

Saturday: Cowabunga Beef Burgers and Yummy Yammy Fries

  2. I made it early today, nice to have the plan in place. Although we are having unseasonably warm weather, I think it was 97F today! Might have to alter my plans if it stays this hot.

  3. Black bean, zucchini, and tomato quesadillas. . . what an interesting combination!! Of course, I’ve been known to sneak shredded zucchini in my spaghetti sauce (shhh! don’t tell my family!)

  4. It definitely was a warm one here today! Of course our weather never stays warm for long, which is why I don’t have a problem with planning soup for later this week. 🙂

  6. This is my first week of menu planning. I think that the half hour we devoted on Sunday evening to making up the plan will probably save me at least an hour or two during the week (and soooo much frustration)!! And I am hoping that it will save $$ at the market, since I will have a list based on what I plan to make, not a list based on what I “think” we will need.

    AND
    Even when I can’t blog hop, knowing that I need to link up helps me be accountable for actually making a menu. Even though mine isn’t always a frugal menu, it streamlines our home and blesses my family when we have some idea of what we are having to eat!

    I have a request from you ladies, though. I’m trying to find healthy snacks that are easy and quick, and you can just grab. I don’t mind making them ahead and having them on hand. But anyone have any interesting suggestions? Let me know here!

  10. I really need to learn how to make burgers, for some reason I cannot make them. The recipe you posted looks like a possibility! It would be so much cheaper to make them, rather than purchase them premade or worse, go out to eat!

  12. I’ve found that I really need to cook my SP fries a bit longer, then broil them for the last 1-2 minutes to crisp them.

    Worth it — my kids love them (so do I!).

  14. Awesome recipes… However i have one little tidbit for you that may help with the soggy fry’s !!!

    Cook them in some H2O first then throw them in the oven, but keep an eye on them cause they wont need to be in the oven long! And you wont need to boil them long either. One other way is to fry them in just a little olive oil with so brown sugar and cinnamon!!!
