Hi all! How was your week? Were you able to stick to your menu plan? I made all my planned recipes but I did have to switch a few days around. That’s the part I love about menu planning, it’s so flexible!
Today though I had a heck of a time coming up with my menu for some reason. Nothing was jumping out at me but I persevered and I think I’ve come up with some good selections. I’m going to try sweet potato fries again. From all the help you gave me a couple of weeks ago I realized I had definitely cooked mine too long last time. I now know cooking sweet potato fries too long will result in a soggy mess. I’ll let you know how they turn out this time around.
My favorite food by far has got to be wrap or tortilla anything. Last week’s Black Bean, Zucchini and Tomato Quesadillas were a big hit. I ended up just mashing the grated zucchini, beans and salsa together and cooking the quesadillas in the oven. You couldn’t even taste the zucchini. So yummy!
Here’s what this week looks like:
Monday: Fuss-Free Ravioli and Cheese Bake with the addition of some sausage and zucchini
Tuesday: Baked Chicken Fingers with Spinach Salad
Wednesday: Polynesian Roast Beef with roasted red potatoes
Thursday: Leftover buffet
Friday: Homemade Quick Pizza
Saturday: Cowabunga Beef Burgers and Yummy Yammy Fries
Simple Supper Sunday

Just a reminder that today at 12:00 noon PST is the deadline to enter to win a seat in Aby Garvey’s online Organize Your Paper Clutter workshop.
Yummy yummy fries sound – yummy!
I generally stick to my plans, but this morning “queasiness” is making that difficult these days! I’m doing my best!
Hope those SP fries turn out next time!

I’ve never had success with sweet potato fries either! Yes, I’m definitely cooking them too long…
I made it early today, nice to have the plan in place. Although we are having unseasonably warm weather, I think it was 97F today! Might have to alter my plans if it stays this hot.
Cheers,
Love the links to all the recipes. Those quesadillas sound yummy, we love black beans!
i am so glad you liked the quesadillas!
Mmmmm… the burgers sound really good!
Black bean, zucchini, and tomato quesadillas. . . what an interesting combination!! Of course, I’ve been known to sneak shredded zucchini in my spaghetti sauce (shhh! don’t tell my family!)
Great looking menu! Thanks again for hosting us!
Your menu looks great!
It definitely was a warm one here today! Of course our weather never stays warm for long, which is why I don’t have a problem with planning soup for later this week. 🙂
mmmmmm, your menu looks fantastic this week 🙂
I got my menu up and I am so excited that half of the week will be meals at the campground!
I am eying the polynesian beef.. thanks for sharing the recipe. Have a good week!

Thanks for your inspiration – a menu plan keeps me sane at mealtimes!
I’m back to participating in MPM. I’ve found that I CANNOT live without it!
Looks like you will be eating well this week:-)
Everything looks delicious! Have a great week.
Another great template. Thanks. I need to write everything down and I’m less likely to lose an “official” full-size sheet of paper. Well, most of the time. 🙂
Looks like a good meal plan. Thanks for hosting!

I’ve got sweet potato fries on my menu this week, too. I’ll have to check out the recipe you’re using.
I’m new to Menu Plan Monday, so I’d like to thank you for hosting this. What a great place to find ideas!
This is my first week of menu planning. I think that the half hour we devoted on Sunday evening to making up the plan will probably save me at least an hour or two during the week (and soooo much frustration)!! And I am hoping that it will save $$ at the market, since I will have a list based on what I plan to make, not a list based on what I “think” we will need.
Thank you so much for MPM. Some weeks I have no time to visit and others I do.
Seeing other peoples menues gives great ideas and inspiration for my own

Even when I can’t blog hop, knowing that I need to link up helps me be accountable for actually making a menu. Even though mine isn’t always a frugal menu, it streamlines our home and blesses my family when we have some idea of what we are having to eat!
Thanks for the accountability!
We are trying to get back to following Weight Watchers, so I HOPE planning out the meals will help keep us on track!
Thanks for hosting! I hope your fries turn out better. They are a big favorite at our house!
I love having a menu plan, so thanks for hosting!
I have a request from you ladies, though. I’m trying to find healthy snacks that are easy and quick, and you can just grab. I don’t mind making them ahead and having them on hand. But anyone have any interesting suggestions? Let me know here!
Yummy munu, may need to steel a few of those recipes!
finally, my life seems to be back to normal and I have a menu! 🙂
I really need to learn how to make burgers, for some reason I cannot make them. The recipe you posted looks like a possibility! It would be so much cheaper to make them, rather than purchase them premade or worse, go out to eat!
Toni
Thanks for the templates!
I stuck to my plans last week, but I’m already off for this week! That happens to me a lot once the weather gets nice.
Your menu for the week sounds great.
Ours was quick and simple this week. Tons of things to get done so we just whipped it together.
Have a great week!
I stole the idea for the pizza and I’m making it too!
Thanks!
I post this every week but I always forget to come link up and leave a comment. You have helped me save so much money

I’ve found that I really need to cook my SP fries a bit longer, then broil them for the last 1-2 minutes to crisp them.
Worth it — my kids love them (so do I!).
Take care!
Hey, Laura!
Have a really wonderful day today! The sun is shining here and the birds are singing. I wish you a lovely Springtime day.
When you have time, stop by and read my Saturday post…It’s my hubby’s and my love story (it was our anniversary).
God bless,
Elizabeth
I’m going to have to try the ravioli:)
Have a great week and happy cooking!!
Awesome recipes… However i have one little tidbit for you that may help with the soggy fry’s !!!
Cook them in some H2O first then throw them in the oven, but keep an eye on them cause they wont need to be in the oven long! And you wont need to boil them long either. One other way is to fry them in just a little olive oil with so brown sugar and cinnamon!!!
Thanks for the meal plan idea. I just did my first one and am even trying a few recipes from the links. I’m so glad I found this!
Happy Monday to everyone!
I do not have much motivation this week so my menu is pretty basic. I do better when hubby is home.
Hope I did everything right (other than being a day late). It’s my first time participating, and I’ll probably be checking out lots of your blogs for more inspiration. I can see that my entrees are going to get old quick!
Thanks for hosting MPM! It helps to keep me on track!
First time (and obviously way too late). Still finding out how to make separate tabs on my blog to post recipes, so probably they will follow later.
Wow! I just found you!! I love your site and I cant wait to maybe participate in MPM!! I’ll have to bookmark you, I just wish you had a “follow” widget!
