Menu Plan Monday ~ Nov 17th

I’m sitting here writing this on my last night with my family :(  I’m heading home tomorrow so I’m going to set this to autopost.  I hope it works!  I just finished packing up my bags and I’m literally sweating.  Talk about hard work.  I’m allowed four bags that can be no more than 50 lbs each which sounds like a lot but totally isn’t when you’ve shopped as much as I have this visit.  Oh my word, I’m seriously out of control.  But I managed to pack and repack it all until I got the bags evened out to to just less than the 50 pound mark each.  Yay me!!  By the time you read this I’ll hopefully be home safe and sound.

So this week it’s back to menu planning for me.  Gosh I’ve been spoiled not having to cook for two weeks, I hope I remember how to do it after all this time :)

I have gotten so many emails with freezer meal links I can hardly wait to go through and compile them all.  Thank you so much.  I hope to do that as soon as I get my life back in order.  I have so many things to tell you about including what I learned at conference, pictures to share and the new products I was introduced to.  Oh and giveaways, we are going to be doing quite a few of those around here in the next little while.  Bear with me though as I get it all together.  Thanks!

So here is what is on our menu this week:

Monday: Fajitas

Tuesday: Fuss Free Ravioli and Cheese Bake (I’ll also add some turkey sausage and peppers)

Wednesday: Coconut Crockpot Chicken served with rice and broccoli

Thursday: Leftover Buffet

Friday: Homemade Pizza

Saturday: Garlic Top Sirloin Pot Roast

Sunday: Simple Supper Sunday

I’m glad you had a nice time with your family.

I’m looking forward to your freezer post. I must admit, I’ve not put one together myself. My mom and my sister and I are getting together after Thanksgiving and I’m taking all my freezer books and stuff. I’m going to teach them how to Freezer cook after the New Year. :) They’ve recieved meals from me a few times, now we’ll try to get together a few times and make them together.

Glad to hear you had a good time with your family. When we lived in Cuba we would visit family in the states and come back with tons of stuff from shopping. I was always packing and repacking bags to make it all work! Your menu looks great!

I used to menu plan when all five kids were home and it saved TIME and MONEY. I am getting back in the habit now that I am in college, expecting a baby and trying to pinch pennies. Love your site!

I will be trying that coconut crockpot chicken. I need to stock up on the coconut milk though. I have been wanting to use it for stir fry, but we just recently moved and that is not easy to find.

I’m making homemade pizza on Friday too, I do this every week and my family expects it now. We get creative with toppings depending on what’s in the fridge.

I want to check out the coconut chicken, I am always looking for good new crockpot recipes.

My menu plan this week is the same food everyday. Beans and Rice. Have you heard of the Micah Project (sustenance diet)? It is meant to give you empathy for what the poor people of Africa eat.

I’ve enjoyed your website so far, and posted my first Menu Plan Monday. I’m not much of an organizer, I seem to prefer spontaneity, even when it ends up being more expensive or taking longer. Who knows…maybe I’ll grow out of that.

I posted some great gluten free recipes in my meal plan monday, and look forward to trying some of yours.

Well, I can see them now. It was fine this morning and my friend, Barb, called me saying that only 3 were showing up for her. Later today when I checked there were none showing for me. But, now they are. Strange. But, I am glad I can see them again! LOL!
