Menu Plan Monday ~ Nov 17th
I’m sitting here writing this on my last night with my family 🙁 I’m heading home tomorrow so I’m going to set this to autopost. I hope it works! I just finished packing up my bags and I’m literally sweating. Talk about hard work. I’m allowed four bags that can be no more than 50 lbs each which sounds like a lot but totally isn’t when you’ve shopped as much as I have this visit. Oh my word, I’m seriously out of control. But I managed to pack and repack it all until I got the bags evened out to to just less than the 50 pound mark each. Yay me!! By the time you read this I’ll hopefully be home safe and sound.
So this week it’s back to menu planning for me. Gosh I’ve been spoiled not having to cook for two weeks, I hope I remember how to do it after all this time 🙂
I have gotten so many emails with freezer meal links I can hardly wait to go through and compile them all. Thank you so much. I hope to do that as soon as I get my life back in order. I have so many things to tell you about including what I learned at conference, pictures to share and the new products I was introduced to. Oh and giveaways, we are going to be doing quite a few of those around here in the next little while. Bear with me though as I get it all together. Thanks!
So here is what is on our menu this week:
Monday: Fajitas
Tuesday: Fuss Free Ravioli and Cheese Bake (I’ll also add some turkey sausage and peppers)
Wednesday: Coconut Crockpot Chicken served with rice and broccoli
Thursday: Leftover Buffet
Friday: Homemade Pizza
Saturday: Garlic Top Sirloin Pot Roast
Sunday: Simple Supper Sunday
Have a great week everyone!!!!

I’m glad you had a nice time with your family.
I’m looking forward to your freezer post. I must admit, I’ve not put one together myself. My mom and my sister and I are getting together after Thanksgiving and I’m taking all my freezer books and stuff. I’m going to teach them how to Freezer cook after the New Year. 🙂 They’ve recieved meals from me a few times, now we’ll try to get together a few times and make them together.
Waiting for your freezer post! Help needed there
Sounds like a super yummy week! I love ravioli and garlic!!
Hope you had a safe trip!
Have a safe trip home! Coconut chicken sounds yummy. Let us know how that turns out. mmmm…
Yay, giveaways!! I will keep my eye out. I hope everything runs smoothly as you get back into your routine.

Hope your visit was wonderful, they are always too short no matter how long you are there – aren’t they? Looking forward to hearing all about your adventures.
Cheers, Kiy
Thank you again!
All the soup recipes are great lunches too, fyi. 😉
Hope you made it home safely. I looking forward to the giveaways. Homemade pizza, had that last week. God Bless.
Hi Laura, First time linker here! Your plan for the week looks great.
Laura – can you remove link 104 – I typed my email by mistake. Thanks!
Yum! That ravioli sounds good!
Hope you had a safe trip, welcome home! The coconut chicken sounds fabulous…
Glad to hear you had a good time with your family. When we lived in Cuba we would visit family in the states and come back with tons of stuff from shopping. I was always packing and repacking bags to make it all work! Your menu looks great!
Toni
I used to menu plan when all five kids were home and it saved TIME and MONEY. I am getting back in the habit now that I am in college, expecting a baby and trying to pinch pennies. Love your site!
Yum! Coconut Chicken sounds delicious! Tucking that away for a future week!
I will be trying that coconut crockpot chicken. I need to stock up on the coconut milk though. I have been wanting to use it for stir fry, but we just recently moved and that is not easy to find.
Hi, I’m (kind of) new here! I’ve been reading your blog for several years now and decided to give it a go! Thanks for being so great!
I’m making homemade pizza on Friday too, I do this every week and my family expects it now. We get creative with toppings depending on what’s in the fridge.
I want to check out the coconut chicken, I am always looking for good new crockpot recipes.
Welcome home!! Happy Monday everyone 🙂
Safe home, hope you had a great visit.
Coconut Crockpot Chicken sounds so good
I hope I did this right. This is the first time I have linked to my menu planning. thanks for offering a way to hold myself accountable!!
Thanks for hosting this!
I’ve been menu planning for awhile now, but this is my first time making it official! Thanks for the great blog.
Yea! I made it again! I will get this down at some point, and I am sure it will get easier.
I posted
Welcome Back!!
WELCOME HOME SISTER! Can’t wait to see you!
The Coconut Chicken Crockpot sounds delish! I’ll try next time.
I am definitely going to try the Coconut Crockpot Chicken and the Garlic Pot Roast! Thank you!
The ravioli sounds really good and I’ll have to try it soon. Thanks for hosting Menu Plan Mondays!
Rita
My menu plan this week is the same food everyday. Beans and Rice. Have you heard of the Micah Project (sustenance diet)? It is meant to give you empathy for what the poor people of Africa eat.
Glad to be a part of this! Very fun…
I love to read these, and I couldn’t resist posting my own this week. I’m trying to hard to be an organized person. It just doesn’t come naturally at all for me! However, I know it is what’s best for me, my family, and our budget. Thanks for the resource of this list each week.
I love reading through your recipes. You’ve inspired me to start menu planning at my house.
My first post for MPM! YAY!
That list of freezer meals sounds great – looking forward to checking it out soon. No pressure though! 🙂
I’ve enjoyed your website so far, and posted my first Menu Plan Monday. I’m not much of an organizer, I seem to prefer spontaneity, even when it ends up being more expensive or taking longer. Who knows…maybe I’ll grow out of that.
I posted some great gluten free recipes in my meal plan monday, and look forward to trying some of yours.
I know you had a wonderful time with your family! Can’t wait to see what you bought 😉
THANK YOU for not closing this thread! And THANK YOU for consistently hosting this. I know it probably becomes a nag to do it, but I thank you, my well-fed family thanks you, my budget thanks you, and blog readers thank you too! I cannot thank you enough for this!!
can’t wait to join you for menu plan monday next week!! thanks!!
Am I the only one that can no longer see all the menu planning links?
They are there, anyone else having problems?
Well, I can see them now. It was fine this morning and my friend, Barb, called me saying that only 3 were showing up for her. Later today when I checked there were none showing for me. But, now they are. Strange. But, I am glad I can see them again! LOL!
Okay. I do not know what is going on, but they are gone again. I just wonder what is happening since everything else is still here for me.
I see no links either. This is so weird.
I do not find the links either! HELP
Mr. Linky was down but I believe the problem is fixed now. Hopefully you can see the links again.
I can’t see the links again. Is it still down?
BTW…thank you Laura for all that you do. I absolutely love you site!
