Menu Plan Monday ~ Oct 27th

Howdy!   It is starting to get pretty cool here in my neck of the woods.  So I finally got the hats and mitts out and got all that organized ready for the first snowfall to hit.  Probably won’t be too long now.   Funny how doing all that has put me in the mood for some Corny Chili.  I love this recipe.  It’s a bit different from your standard chili recipes and I like that it has corn in it and isn’t as heavy.  Still very comforting though 🙂

So last week I made Broccoli and Cheese Soup which I was so looking forward to.  I’d love to say it was great and I’m sure it really is if made with regular cheese.  Without even thinking I made the mistake of just adding my usual cheddar cheese into the soup.  I always buy the light version and let’s just say the light version just doesn’t melt too well in a soup recipe.  Especially a soup recipe that is suppose to be creamy.  Ugg.  We still ate it though because really at that point what else were we going to do but it didn’t have that magical creaminess about it that I know it should have had.  Drat.  I’ll definitely try it again sometime soon though and hopefully I’ll get it right this time.

Next weekend I’m flying out to Ontario to see my family and attend the National Professional Organizers conference in Toronto.  I’m so excited about it and this year I’m going to be one of the speakers!  I still can’t really believe it especially after my humbling experience last year.

Thursday: Quick Roast Beef with Roasted Potatoes and Carrots

Friday: Fettuccine Bolognese (mmm, this one looks so good!)

Saturday: I’m leaving on a jet plane!  Woohoo 🙂

  1. What a bummer about the broccoli and cheese soup last week! But, that tortellini soup looks like it just might make up for it…yummy!

  2. I wish it would snow here soon, but unfortunately (?) we have pretty much the same sunny weather all year round here in California. 🙂 I’m still in the mood for fall, hearty food though.

  3. Your menu looks yummy this week! Mine meals for the week are all using leftovers from the freezer (I almost always prepare extra for the freezer 🙂

  9. This is my first time posting on here, but I’ve done menu planning for about a year. I post my menu plans on Thursdays instead of Mondays because that’s when I go shopping. It’s a lot easier for me.

  10. Your menu sounds great, very comfort food for fall… I should have checked it before making mine. It would have saved me some trouble planning because everything sounds just like what I would want to eat right now. I even have a taco chili on that is very much like a corny chili! Great minds think alike, I guess!

I had my week organized, overall, for many years and I had a basic dinner plan that I followed. And yet, somehow, adding the menu planning to my Monday has boosted my already above-average organizing to a new level.
