Hello my happy fellow menu planners!! Guess what? After considering all your comments last week, I decided to bite the bullet and make the Greek Spaghetti last week despite the number of ingredients. I’m happy to report that it was well worth the effort and it was delicious!! The only thing I didn’t like about it was the celery but my husband didn’t seem to mind, go figure….oh and I only used one package of spinach 🙂
It did take a little extra time to make but it was a great recipe for my daughter (11) to help me with. Her job was to gather and measure all the ingredients for me while I assembled. We made an awesome team!
Speaking of kids cooking I got a lovely email the other day introducing me to a new site called Jr Chefs of America. It’s all about kids teaching other kids how to cook by video. It’s a great idea for getting kids excited about being in the kitchen and inspiring them to cook up some delicious recipes for themselves. So far they have eight recipe videos up but add a new one every other week. Check it out!
I’d also like to recommend two other dishes from last week. The Bruschetta Chicken and the Southwest Lasagna Rolls were so good and quick to prepare as well. I used gluten free noodles in the lasagna rolls and you couldn’t even tell!

Monday: Zesty Corn Quesadillas
Tuesday: Hamburgers on the bbq served with caesar salad
Wednesday: 5 Minute Southwest Layered Salad
Thursday: Leftover buffet
Friday: Chicken Pesto Pizza
Saturday: Asian Pork Tenderloin
Sunday: If you can find it, you can eat it cause this momma isn’t cooking 🙂

Finally, I’ve been waiting for hours (haha) and now I can go to bed. 🙂 Seriously though, glad you tried that dish and what a brilliant idea to get your daughter involved. Love it. Also love the pork recipe, I am a huge fan of marinades. Added that to my ‘must make’ list!

My first time! I’m so excited!
Big Question though- I looked for my recipes on-line and couldn’t locate any. How do you find them so you can link them for others? OR- do you ONLY find recipes on-line so you can link them for others. Mine came out of Rachel Ray’s 30 minute meals, and you would think they would be on her website.
Help me out please! I’m brand new and need tending to! LOL

I am a big fan of the Taste of Home publications and am able to find most of the recipes online. Those that I can’t find and that turn out I usually end up posting myself.

I visit your site often, and scroll to whatever month it happens to be, throughout the various years (it’s August, for example, so I’ll scroll thru 2008, ’09, etc). I was so excited to see the Jr Chefs of America website. My kids are now grown (and my 16 YO loves spending time in the kitchen), but I’m a nanny, and get so excited when kids want to learn how to cook. The site seemed like such an awesome idea! I still nanny for some of the families who no longer need me on a regular basis, but want me for overnights, and a popular, fun thing to do is make our own homemade pizza. I make my own crust, and they love watching it rise. I had so much hope for this site. Thanks for all of your recipes. I’ve been enjoying your site for years. xo, Robin
