Menu Plan Monday ~ August 18th

Hello my happy fellow menu planners!! Guess what? After considering all your comments last week, I decided to bite the bullet and make the Greek Spaghetti last week despite the number of ingredients. I’m happy to report that it was well worth the effort and it was delicious!! The only thing I didn’t like about it was the celery but my husband didn’t seem to mind, go figure….oh and I only used one package of spinach :)

It did take a little extra time to make but it was a great recipe for my daughter (11) to help me with. Her job was to gather and measure all the ingredients for me while I assembled. We made an awesome team!

Speaking of kids cooking I got a lovely email the other day introducing me to a new site called Jr Chefs of America. It’s all about kids teaching other kids how to cook by video. It’s a great idea for getting kids excited about being in the kitchen and inspiring them to cook up some delicious recipes for themselves. So far they have eight recipe videos up but add a new one every other week. Check it out!

I’d also like to recommend two other dishes from last week. The Bruschetta Chicken and the Southwest Lasagna Rolls were so good and quick to prepare as well. I used gluten free noodles in the lasagna rolls and you couldn’t even tell!

Thanks to everyone who participated last week we reached OVER 300 Menu Plan Monday participants!!  So very exciting!!!

Here is what we’ll be eating in my neck of the woods this week:

Monday: Zesty Corn Quesadillas

Tuesday: Hamburgers on the bbq served with caesar salad

Wednesday: 5 Minute Southwest Layered Salad

Thursday: Leftover buffet

Friday: Chicken Pesto Pizza

Saturday: Asian Pork Tenderloin

Sunday: If you can find it, you can eat it cause this momma isn’t cooking :)

Finally, I’ve been waiting for hours (haha) and now I can go to bed. :) Seriously though, glad you tried that dish and what a brilliant idea to get your daughter involved. Love it. Also love the pork recipe, I am a huge fan of marinades. Added that to my ‘must make’ list!

I’m glad you went ahead and made that tasty recipe for pasta- it sounds delicious. I hate celery myself and have been leaving it out of recipe for years- since I started cooking, actually. :)

My first time! I’m so excited!
Big Question though- I looked for my recipes on-line and couldn’t locate any. How do you find them so you can link them for others? OR- do you ONLY find recipes on-line so you can link them for others. Mine came out of Rachel Ray’s 30 minute meals, and you would think they would be on her website.
Help me out please! I’m brand new and need tending to! LOL

Beth Ann, I would have to say a little of both.

I am a big fan of the Taste of Home publications and am able to find most of the recipes online. Those that I can’t find and that turn out I usually end up posting myself.

I love taking part in your Monday meal planning. I have been telling all my friends. I think its great to have so many recipes and ideas just at the click of the mouse.

I have been looking for a chicken pizza recipe to do on the BBQ but I think that your recipe looks great. I may try it next week

Your menu sounds great this week. We’ll have pretty much the same things we usually have.

Hubby is very happy I started making the menu plan. It makes his life so much easier since he’s the one that cooks LOL

This week’s menu at our house is less organized than usual – we grilled out and prepped all the sides, so now each day we can choose from what’s available.

I am bookmarking that layered salad to try soon!

Congrats on the 300 plus posters! This is such a fun way to share menus and recipes. I caught a sale on binders and printer paper at Walgreens so I will be a recipe printing madwoman this week :) Thanks for keeping this going!!

I may have to use the Chicken Pesto Pizza recipe for my Friday night pizza. I have tons of basil in the garden and grilled chicken in the freezer. Sounds yummy!

Thursday- Homemade chicken and dumplings w/corn

Friday- Homemade pizza, salad

Saturday- Leftovers

Sunday- Pot Roast, Mashed Potato’s and gravy, corn

Monday- Leftovers

Tuesday- Turkey chili
