Menu Plan Monday ~ March 17th

Welcome to another week! We had a couple of beautiful sunny days here but unfortunately now we are back to snow. So sad, I’m so anxious for spring. This has been a very long winter.

Some of you may still be hesitating to give menu planning a try because you are having trouble finding the time or energy. Periodically I like to tell you about resources I come across that do the work for you. About a year ago I mentioned a site called Menu In A Box. Well since then Ruth has upgraded her product into an ebook format and right now it is on sale for $17.50 US. Her menu in a box includes 20 weeks of dinners, 20 shopping lists and over 100 fast and fresh recipes. I previewed her product and it is well organized and the recipes look to be really healthy. Last week I forgot to tell you about how much I loved the Angel Hair Pasta with Garden Vegetables recipe I made the week before. It was absolutely delicious! I made it with whole wheat pasta instead and added some sausage for my meat lovin husband. We really enjoyed it, very refreshing!

Next Sunday is Easter so today I spent a couple of hours sitting down with my various Taste of Home publications and came up with a yummy Easter dinner that we will be enjoying with friends and family. I’m happy to share all the recipe links with you below. Happy Easter!

My menu for this week includes:

Monday: Ultimate Grilled Cheese and soup with green jello for dessert (Happy St. Patrick’s Day!)

Tuesday: Beef Vegetable Soup served with Rustic Round Herb Bread

Wednesday: Chicken Caesar Salad

Thursday: Turkey Burgers with Buttermilk Wheat Rolls (these are so fantastic!)

Friday: Leftover Buffet

Saturday: Fajitas

Easter Sunday Dinner: Ham with Pineapple Sauce, Mashed Potatoes, Colorful Coleslaw, Garlic-Buttered Green Beans, Honey Glazed Carrots, Focaccia Bread, Strawberry Banana Trifle

  1. We have our big family Easter meal at Friday lunch time and it is always a seafood extravaganza. Luckily I will be the visitor so my sister is planning all this! Your Easter Sunday dinner sounds like a wonderful feast. Happy Easter Laura and as always, thanks for hosting.

  7. Hey Laura your Tuesday is my Wednesday. I’m using a back issue of Taste of Home Light & Tasty and Wednesday is Beef Vegetable Soup with Rustic Round Herb Bread. It should be good.

  10. Pretty easy week what with St. Patty’s today, my husband’s birthday on Wednesday (and he wanted Reuben’s which will use leftovers from today) and Easter on Sunday. And then next week will use Easter leftovers too. I can’t wait for what we call Scalloped Potatoes Au Gratin with Ham! 🙂

    The buttermilk wheat rolls look de-lish! I am definitely bookmarking that. My guys love rolls.

    We re-tried a recipe this week. We tweaked our coconut chicken and liked it better than last time. I think we still need to add more sugar, though.

    Planning menus have CHANGED the way we eat. Seriously. Taking fifteen minutes out of your week to plan a menu and make a grocery list goes A LONG WAY, trust me.

  14. Laura, I completely forgot about Easter when I did my meal plan- I just treated it like any other week! LOL! I’m pretty sure we won’t eat bean and rice burritos on Easter Sunday! 🙂

    Your Easter Dinner sounds lovely. I won’t be making my own, but joining my MIL instead, who is a wonderful cook, and I just get to tag along- lucky me!
