Hi friends! How are you all? We had a fabulous sunny weekend here. I got to take a nap out on my patio couch yesterday and that’s always a sign of a really good weekend. My red Mojito basket which includes strawberry and mint plants is really starting to take off now. I love throwing some mint leaves into my water while I’m sitting out there, it’s so delicious.

We are so close to having all our restrictions open. The end is near and I can hardly wait!

Here’s what we’ll be eating for dinner this week.

My Weekly Menu Plan:

Monday: Creamy Chicken Potato Casserole

Tuesday: Slow Cooker Mongolian Beef served with rice and broccoli

Wednesday: Spaghetti Squash with Meat Sauce

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with bread machine pizza dough and for me Almond Flour Pizza Crust with Chicken

Saturday: Dijon Rosemary Pork Chops

Sunday: YOYO (you’re on your own!)

  1. We are not growing mint at this time, but I got a bunch in the last CSA. I am making mint extract with it (just vodka and the chopped mint, let sit a couple of weeks) a drop or two would be great in lemon water! Which I never seem to remember to make for myself, thanks for the reminder! Have a great week ahead.
