Hello friends! I know many of you in the US are getting an extra day off today and I hope you are enjoying it to the fullest! Here in Canada we had our long weekend last weekend. And look at what’s ahead for us this week! Those numbers are in Celcius. 28 degree Celcius is about 82 in Fahrenheit. Not bad at all. The sunshine makes me so very happy, woohoo!!

awesome weather coming up

This past weekend we enjoyed our first hot dog roast of the season and it was delightful. Easiest dinner ever! I didn’t even have to cook my own hot dog thanks to my 15 year old. No cooking for mama, sounds perfect to me :). Sadly no marshmallows for me though since I don’t think a sugar-free marshmallow exists. I’m pretty sure if you took away the sugar, there wouldn’t be much left to enjoy, ha!

Here’s what we’ll be eating for dinner this week.

My Weekly Menu Plan:

Monday: Mongolian Ground Beef served over rice and with broccoli

Tuesday: Grilled Ginger Garlic Pork Ribs served with grilled peppers

Wednesday: Gluten-Free Rotisserie Style Shredded Chicken served in tacos with some fixings

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with bread machine pizza dough and for me Cajun Baked Onion Rings

Saturday: Steak Fajita Salad

Sunday: YOYO (you’re on your own!)

  1. Oh the irony….we too had a hot dog cookout with s’mores too…last weekend too! My brother did the work. My mom and I were happy about it!
    And yes, there is such a thing as sugar free, gluten free keto marshmallows. My brother’s wife has gluten issues, so she made these…and they are yum.
