Hi friends! I hope you had a wonderfully relaxing weekend and are ready for an awesome week ahead. So if you haven’t planned your menu yet, now is the time. I would be so stressed if I didn’t know what I was going to be making for dinner each day. It saves my sanity to know I don’t have to wing it, wasting time and money getting something together at the last minute. No thank you. I want to get in and out of the kitchen fast and get on with doing things I like to do. But that doesn’t have to mean eating frozen foods. There are plenty of delicious, healthy meals that can be made in no time flat. And those are the types of recipes I share here.
Recipe Highlight:
On Sundays though I will often set aside some time to bake a little treat for myself or my family. Since it was Mother’s Day yesterday I decided to attempt to make another Paleo Apple Crisp. Apple crisp is my favorite pre-Paleo dessert and I’ve never found a Paleo recipe that even comes close. All the recipes add nuts of some kind and yes I love nuts but I don’t want them in my apple crisp. It just seems all kinds of wrong. Also oats is a pretty main ingredient in apple crisp and I can’t have that. But I’m not a quitter and ladies (& gentlemen?) I’m here to tell you that I may have found the one!
This Paleo Apple Crisp recipe has no nuts and instead uses unsweetened shredded coconut and a bit of maple syrup for sweetener. It was really really good! The only thing I’d do differently next time is add some strawberries to go along with the apples. It just needed a touch more sweetness and I think some strawberries would do the trick. So yummy and I can’t wait to make it again!

Wednesday: Greek Chicken and Potatoes
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Easy Crab Cakes
Saturday: Sheet Pan Green Beans and Sausage Dinner
Sunday: YOYO (you’re on your own!)
