Hi friends! I hope you are all doing well. I am up to my eyeballs with doing taxes right now. Here in Canada we have until the last day of April to get them submitted. I’m just about there and I’ll be so happy to have that burden off my back. Then I’ll be able to get back to organizing all the things which is far more exciting for me! 🙂

Yesterday I had some bananas to use up and decided to make an allergy friendly treat for my son. He can’t have dairy, gluten, eggs or nuts so it gets a little tricky. This recipe for Vegan Gluten-Free Chocolate Banana Muffins was really easy to whip up and my son thought they were delicious. If you are looking for a yummy recipe for either lunch or a quick snack, that’s free of major allergens, you’ll want to check this one out.

My Weekly Menu Plan:

Monday: Grilled Bacon Burgers

Tuesday: Crispy Oven Fried Chicken Wings served with toss salad

Wednesday: Slow Cooker Pork Carnitas

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with bread machine pizza dough and for me Low Carb Pizza Crust

Saturday: Garlic Pork Steaks with Lemon Pepper Beans

Sunday: YOYO (you’re on your own!)

  1. Our taxes have been submitted, and I agree, a nice task done! I have been meaning to tell you I love the phrase Leftover Buffet! We do that here as well, it sure saves a lot of time and money. Have a great week ahead, and enjoy being done with taxes…
