Hi friends! How are you all? We had another boring weekend here in lockdown. Thankfully our weather has warmed up so that’s good. I’m sorry if any of you are experiencing hard weather situations where you live. I’ve been praying for those of you in Texas and all you are going through. So so hard.

I did some more baking this past weekend. That’s how you know I was bored, ha! Well that and we had so much ripe bananas that needed to be used up. So first I made some Vegan Gluten-Free Banana Bread for my oldest son. He liked it although he said it was a little under cooked. Oops. Then so as not to leave my youngest out, I made him some non-allergy friendly (lucky boy has no allergies) Banana Chocolate Chip Muffins. These ones I managed to cook perfectly. Yay me! Both recipes were quick to make. I’ll have to make some Paleo muffins for me next weekend.

Here’s what we’ll be eating for dinner this week.

My Weekly Menu Plan:

Monday: Paleo Sloppy Joes served with tossed salad

Tuesday: Spaghetti Squash Carbonara

Wednesday: Baked Pork Tenderloin with Mustard, Garlic & Herbs served with baby potatoes and carrots

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with bread machine pizza dough and for me Pizza Egg Bites

Saturday: Hearty Ground Turkey Soup with Vegetables

Sunday: YOYO (you’re on your own!)
