Hi friends! The weather here has turned cold on us. We are allowed outside visits again but at -30C (-22F) it’s a little too chilly for that to happen sadly. But my family did get out for a walk today just to get some fresh air. My eyelashes had icicles on them. We weren’t out there long but it sure was refreshing.
Recipe Highlight:
I’ve got a recipe highlight for you today. It’s not a dinner recipe but it is a healthy muffin recipe. If you are trying to eat healthier this year, these Paleo Chocolate Banana Muffins are refined sugar free and absolutely delicious. I freeze them to pull out for easy lunches. Really yummy. This recipe makes 12 muffins which is nice. When I was searching Pinterest for muffin recipes so many of them only made 9 muffins. I just do not understand that logic. A muffin pan has space for 12 muffins so I think all recipes should make 12. Does this make anyone else crazy?
Here’s what we’ll be eating for dinner this week. Breaking the slow cooker out twice again this week!
My Weekly Menu Plan:
Monday: Baked Pork Tenderloin served with rice and broccoli
Tuesday: Slow Cooker BBQ Pulled Chicken Tacos
Wednesday: Slow Cooker Ham and Potato Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Crab Cakes
Saturday: Honey Dijon Apple Bacon Cranberry Salad
Sunday: YOYO (you’re on your own!)
