Hi friends! Hope you are doing well. I didn’t post a menu plan last week as it was our Canadian Thanksgiving. My middle son came home to spend the weekend with us and it was a really nice time of rest and relaxation. We also did a lot of delicious eating. I ended up going with a different gluten-free stuffing recipe than I had originally planned and it was so so good. So I thought I’d share the link with you in case you are looking for a gluten-free version for your family. It’s not Paleo but for the holidays I still had some for a treat.
Gluten-Free Apple Cranberry Stuffing
And this recipe for Caramel Cinnamon Baked Apples really hit the spot. Yummy!
This past week we got our first snowfall. Happy we got a month and a half of beautiful fall before snow set in this year. Time to start listening to Christmas music I guess, ha!

Monday: Roasted Tomato Basil Soup served with grilled cheese for my boys
Tuesday: Spaghetti Squash Bolognese
Wednesday: Spicy Honey Garlic Chicken Thighs served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Bang Bang Shrimp
Saturday: Slow Cooker Pork Tenderloin with Apples
Sunday: YOYO (you’re on your own!)
