Hi friends! I actually forgot this weekend was a long one with tomorrow being a day off for my hubby. So I thought about skipping Menu Plan Monday this week so I could just chill with my family. But then I realized that I’d probably regret that decision come Tuesday when I had no idea what to make for dinner. So here I am but I’ll keep this short and sweet. I hope you all are having a terrific long weekend wherever you live.
Yesterday my husband made us another delicious rotisserie chicken on the BBQ. I especially love it because we get two dinners out of it. Chicken one night and homemade chicken soup the next. So good!

My Weekly Menu Plan:
Monday: Paleo Chicken Soup (using leftover chicken)
Tuesday: Baked Honey Mustard Pork Chops
Wednesday: Easy Baked Italian Meatballs
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Cassava Pizza Crust
Saturday: Homemade Maple Breakfast Sausage
Sunday: YOYO (you’re on your own!)
