Hi everyone, I hope you had a gorgeous weekend filled with much relaxation. We had a quiet weekend which is just the way I like it. We took a little drive and I was able to capture this awesome shot along the way. Taking scenic shots is so relaxing to me.
Paleo Strawberry Jam:
I also found the time to whip up another batch of this Paleo Strawberry Jam. I got the recipe from my friend Cheryl (she’s Dish By Cheryl on Instagram and she shares lots of deliciousness). Look how pretty it is. That color!
It’s so easy to make too. Add 2 cups of chopped strawberries to a saucepan on medium heat. As it softens use a masher to get most of the chunks out. Then add 2 tbsp of chia seeds, 1 tbsp of lemon juice and 2 tbsp of maple syrup. Take off the heat and let sit for 15 minutes. That’s it. So good! I love to have it on my Paleo pancakes.

Tuesday: Sticky Asian Meatballs served with rice and broccoli
Wednesday: Beef and Shrimp Fajitas
Thursday: Leftover buffet
Saturday: Juicy Baked Pork Chops served with asparagus
Sunday: YOYO (you’re on your own!)
