Hi friends! I hope this lovely Monday finds you well and ready to reset for the week ahead. I definitely need to. My middle son was home visiting all last week so we worked on a puzzle, played so many games and ate and ate some more. It was a really great week! But now I need to get some work done for sure. I had a wonderful birthday and am so sad it’s all over for another year. I’m someone that loves to have things to looked forward to and now I have nothing on the horizon to count sleeps for. Like many people we had to cancel our summer vacation plans. But I am super grateful for our health and that I got to hug my son’s neck again if only for a week.
This week my husband has asked me to plan some salads because his garden lettuce is ready to go. My husband loves to garden although we have a very tiny yard so he doesn’t have a lot of space to do it. But he does have a small greenhouse and this year built some new garden boxes.
I’ve got a Caesar salad on the menu this week and rather than making my own dressing I will be using this Paleo friendly one that I found at Walmart. It’s really good.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Grilled Honey Pork Steaks served with rice and broccoli
Tuesday: Healthy Taco Salad
Wednesday: Happy Canada Day! Chicken Avocado Caesar Salad
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Fluffy Scrambled Eggs
Saturday: Grilled Turkey Burgers
Sunday: YOYO (you’re on your own!)
