Hi friends! It’s a long weekend here in Canada as it’s Victoria Day today. So my hubby is home and we are hoping the weather cooperates so we can putter in the new garden boxes he just made. However they are calling for thunder and lightening so that stinks. Oh well, I guess I’ll relax and read instead. That’s sounds delightful.
I made these healthy Paleo Apple Muffins yesterday and they were really good. You can buy almond flour at Costco for a great price if you are wanting to try these.

My Weekly Menu Plan:
Monday: Easy Bunless Burgers
Tuesday: Easy Baked Chicken with potatoes and carrots
Wednesday: Slow Cooker Mongolian Beef (subbing in coconut sugar and coconut aminos)
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Paleo Pizza Crust
Saturday: Slow Cooker Ribs & Potatoes
Sunday: YOYO (you’re on your own!)
