Hi friends! How many of you are still menu planning while in isolation? I am but it’s a pretty flexible plan depending on our moods on any given day. I am still getting my groceries at 7:00 am Monday mornings and that seems to be going well. Although the amount I’m spending on groceries has almost doubled since I’m not able to shop the sales at all three of our grocery stores. The grocery store I’m going to is the most expensive one but it’s also the one I feel safest at. They are doing a great job keeping the store clean and sanitized. How are you finding the grocery situation where you live?
Did you all have a chance to read my catch up post from last Friday? I shared in that post what my son and I are doing with the batches of caramel popcorn we are making. It might give you some ideas to do as well.
We continue to do a lot of bun making over here and I must say we are getting pretty good at it. The 30 Minute Dinner Roll Recipe that we are using from Spend with Pennies is fantastic and EASY. I think our last batch was our best yet. At least that’s what my family thought.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Mongolian Beef Meatballs served with rice and broccoli
Tuesday: Healthy Chicken Alfredo with Spaghetti Squash
Wednesday: Ground Pork Tacos with Pineapple Salsa
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Grain-Free Paleo Pizza
Saturday: Paleo Pot Roast with potatoes and carrots
Sunday: YOYO (you’re on your own!)
Bonus recipe: Going to try making Paleo Sandwich Bread, yikes!
Have a wonderful week everyone!!

Hey Laura! I spend at least $50 more a week doing groceries since i don’t take the time to look if things are on sale. I just want to be in and out. Can’t wait till that goes back to normal.

Yes it’s definitely tricky but I’m really not spending any money anywhere else right now so I guess it all works out. Stay safe!
