Hi friends! It’s time for another Menu Plan Monday where I try real hard to get you to prepare a menu for the week. It really will change your life!
I had a basketball filled weekend in the city which meant I had a chance to go to Costco. The closest Costco to us is two hours away. It was a very exciting trip because Costco now carries these delicious Paleo crackers that I love for a FRACTION of the price I was paying for them online. I almost started crying right there in the Costco aisle it was that emotional for me. When you follow a strict diet for health reasons, it’s always great to have some staples on hand that are ready to eat. I love Costco!
Kids Cook Real Food:
I’m excited to tell you that enrollment has once again opened for the Kids Cook Real Food eCourse. As you know I strongly believe that all kids should be taught how to cook so they can help out in the kitchen. Since everyone eats the food, everyone should help prepare it. I taught all my kids how to cook and they were able to take on the job of preparing entire meals by themselves when they were in their teens. It is a beautiful thing! Monday: Garlic Butter Herb Steak Bites with Potatoes
Tuesday: Garlic “Parmesan” Chicken Wings served with tossed salad
Wednesday: Mississippi Pot Roast served over mashed potatoes and with broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Easy Dijon Baked Salmon
Saturday: Dinner out
Sunday: YOYO (you’re on your own!)

Another delicious (savory and salty) gluten free cracker that I find in Chicago-area Costco stores is RW Garcia’s Sweet Potato crackers.

They are expensive, but oh so satisfying. It’s a bit of corn tortilla chip with sweetness from the potato (and not as brittle/hard as tortilla chips).
