Welcome to Menu Plan Monday!
Hi friends! I spent a fantastic weekend with 4 girlfriends shopping in the big city. Since I live in a small town it’s always nice to get away to find some great deals and enjoy some much needed laughter. The best! We went out for dinner on Saturday and boy did I enjoy my meal. It was a sun-dried tomato grilled salmon on a wedge of lettuce with a soft egg, avocado, bacon and a wee bit of feta. It was so so delicious! I really love when restaurants up their salad game. They are usually so boring! And no I didn’t eat the ranch dressing it came with but I didn’t even need it.
The next day I discovered a yummy chia seed pudding that was so good I could have cried. When I got home I went online and found a very similar recipe. I can’t wait to try making it myself!!

Monday: Tomato & Zucchini Pasta Sauce over pasta for the family and spaghetti squash for me
Tuesday: Slow Cooker Basil Chicken in Coconut Curry Sauce
Wednesday: Slow Cooker Barbacoa Beef Tacos
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Nourishing Potato Onion Soup (I’ve been craving soup)
Saturday: Extra Crispy Chicken Wings served with side salad
Sunday: YOYO (you’re on your own!)
