Welcome to Menu Plan Monday!
Hi friends, I’m back! I was away for two weeks visiting family in Ontario. The first week we spent with my entire side of the family at a beautiful cottage on the lake. It’s the same cottage we went to last year. It’s big enough to hold all 12 of us with a lot of space for all the cousins to run around together. I also got to escape all the rain we had been getting in Alberta for the hot hot temps in Ontario. That was absolutely delightful. I love the sunshine so much as you can see, ha!
Isn’t this cottage gorgeous? It sure was hard to leave!
Now it’s back to getting my menu plan done. With all my kiddos home for the summer menu planning takes forever. Trying to find something that not only pleases everyone but keeps in mind my son’s food allergies and my Paleo diet is hard work. Once my plan is done though I don’t have to worry about it for the rest of the week. It makes pushing through and getting it done so worth it. Whew!

My Weekly Menu Plan:
Monday: Healthy Chicken Alfredo with Spaghetti Squash (I’ll use ham instead)
Tuesday: Mostly Veggie Steak Stir Fry
Wednesday: One Pan Crispy Chicken Thighs with roasted vegetables
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Omelette
Saturday: Easy Bunless Burgers
Sunday: YOYO (you’re on your own!)

I am loving leftover and YOYO nights. They are the same night in my house. I am off duty on Fridays the guys eat leftovers and figure out who eats what on their own. Those chicken Thighs look so good! And the cottage is just perfect!
