Welcome to Menu Plan Monday!
Hi friends! How are you? We have been experiencing some cold temps up here in Northern Alberta, Canada these past couple of days. Yesterday I stayed warm on the couch under my cozy blanket reading a book and it was wonderful.
I don’t even have to convert this temp for my American friends since I do believe -40 is the same in both Farenheit and Celsius :).
Recipe Highlight:
If you are looking for a healthy bread alternative you’ve got to try this yummy Paleo Crusty French Bread. This is the first Paleo yeast bread I’ve tried and while it didn’t really rise like the recipe said it should, it was still delicious. It might have had something to do with how cold it is here right now. Anyway what a treat to have a slice of bread. I will definitely be making it on the regular around here because nothing warms you up on a cold day like some good ole comfort food does!

Here’s what we’ll be eating this week. More easy recipes on the menu because I like to get in and out of the kitchen FAST!
My Weekly Menu Plan:
Monday: One Pan Greek Chicken served with Tomato, Cucumber, Avocado Salad
Tuesday: Slow Cooker Beef Stew (modified slightly for Paleo)
Wednesday: Easy Oven Baked Pork Chops (I’ll replace the brown sugar with coconut sugar) served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Simple Paleo Tortillas (I leave out the ghee and they work out just fine without it)
Saturday: Healthy Creamy Chicken Mushroom Soup
Sunday: YOYO (you’re on your own!)

Hi Laura! It’s been a long time since I commented:). I’m in Northern BC and also having similar temperatures. Brrr. We woke Sunday morning to a frozen water pipe even. Took most of the day to thaw it out.
I’d love to hear what you end up eating for Saturday’s yo-yo:). Maybe you can open with that for next Monday’s meal plan:)
