Welcome to Menu Plan Monday!
Hi everyone! Happy Monday to you and welcome back to another Menu Plan Monday. I’m so excited because this weekend is Canadian Thanksgiving and I’ll get to see my son. Well hopefully his older car will get him here 🙂 Say some prayers for us cause this momma needs to see her boy. And speaking of my boy, today is his 19th birthday!!
My daughter (21) sadly can’t be home for Thanksgiving as she is currently going to school in Korea for a semester 🙁
So because of the upcoming holiday I wanted to let you know that there will be no Menu Plan Monday next week (Oct 8). Thank you in advance for understanding. You guys are awesome!
Do you all remember when I use to have a recipe contributor here? Gosh I miss that. Anyway I bring this up because I got the sweetest comment from a reader recently on one of those recipes. It was on the Chocolate Chip Walnut Banana Bread recipe and she said it’s the best banana bread she’s ever made. So I thought I’d share the link with you in case any of you have a hankering for banana bread too. Doesn’t it look delicious?!
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Honey Lemon Ginger Chicken served with rice and broccoli
Tuesday: Easy One Pan Spaghetti and Meatballs – my son’s cooking night – I’ll make for myself a quick Healthy Sesame Chicken Chopped Salad (using leftover chicken from Monday)
Wednesday: Paleo Creamy Ham and Potato Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Grain Free Pizza Crust
Saturday: Melt-in-Your-Mouth Pot Roast
Sunday: Thanksgiving Dinner: Lemon & Herb Roasted Chicken, Light & Fluffy Dairy-Free Mashed Potatoes, Roasted Asparagus and for dessert Paleo Pumpkin Coffee Cake and Allergy Friendly Chocolate Cupcakes for my son
